I never could figure out how they managed to beam the pilot back into his moving jet.

Whilst swooshing by the planet at timewarping speeds? Yeah.
Or, for that matter, why beaming him back to the jet would somehow reset his memory.
Or why the Enterprise going back again, then forward, would make the Enterprise not be still climbing out of atmo on Earth.
