Great substitute for hash browns for breakfast. Works for dinner too.
Ingredients:
- 1 c. cold water
- 1/2 tsp salt
- 1 egg, beaten
- 3/4 c instant mashed potatoes
- 1/4 c grated cheese
- Freshly ground pepper (optional)
- 2 Tbs butter
Directions:
- Mix cold water and egg with a whisk.
- Add instant mashed potatoes and salt.
- Mix in with the whisk.
- Add cheese and pepper.
- Melt butter in pan on medium heat.
- Divide mixture into four parts.
- Using wet hands, shape each part into a pancake shape.
- Place in pan with butter.
- Cook until EXTRA crispy (about 10 mins).
- Turn over, flatten slightly.
- Cook for an additional 6-8 mins.
Serves: makes 4 pancakes
