{"id":1002,"date":"2014-11-06T05:00:17","date_gmt":"2014-11-06T12:00:17","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1002"},"modified":"2018-10-19T14:08:01","modified_gmt":"2018-10-19T20:08:01","slug":"jambalaya","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/jambalaya.html","title":{"rendered":"Chicken and Sausage Jambalaya"},"content":{"rendered":"<p align=\"LEFT\"><em>We cheated &#8211; the recipe called for chicken pieces, but who wants to deal with bones at a dinner party?\u00a0 You can also substitute\/add shrimp.<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>6 Tab oil (divided use)<\/li>\n<li>3 lb chicken tenders, cut in thirds (or boneless thigh meat)<\/li>\n<li>1 lb Polish sausage, sliced in \u00bd inch rounds (or, better yet, andouille\u00a0sausage)<\/li>\n<li>1 can diced tomatoes (28 oz)<\/li>\n<li>1 green bell pepper, seeded and chopped<\/li>\n<li>2 ribs celery, chopped<\/li>\n<li>5 cloves garlic, diced<\/li>\n<li>4 c chicken broth<\/li>\n<li>1 Tab Worcestershire sauce<\/li>\n<li>3 Tab Creole seasoning blend<\/li>\n<li>2 c uncooked white rice<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Heat 2 Tablespoons oil in a very large heavy Dutch oven or roasting pan over medium heat.<\/li>\n<li>Season the sausage and chicken pieces with Creole seasoning.<\/li>\n<li>Saute sausage until browned.<\/li>\n<li>Remove with slotted spoon and set aside.<\/li>\n<li>Add 2 tablespoons oil and saute chicken pieces until lightly browned on all sides.<\/li>\n<li>Remove with slotted spoon and set aside.<\/li>\n<li>In same pot, heat remaining 2 Tablespoons oil and saute onion, bell pepper, celery and garlic until tender.<\/li>\n<li>Stir in tomatoes, Worcestershire sauce, salt and pepper.<\/li>\n<li>Stir in the chicken and sausage.<\/li>\n<li>Cook for ten minutes, stirring occasionally.<\/li>\n<li>Stir in the rice and chicken broth.<\/li>\n<li>Bring to a boil, reduce heat and simmer for 20 \u2013 25 minutes or until the liquid is absorbed.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>10<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> Based on New Orleans food, NewOrleansOnline.com<\/p>\n<p align=\"LEFT\"><b>Comments: <\/b>There are multiple \u201cauthentic\u201d recipes for Jambalaya.
