It retains everything you love about lasagna \u2014 the tomatoey marinara, spicy Italian sausage, soft sheets of pasta and milky ricotta cheese \u2014 and simmers it together with chicken stock to create the red sauced comfort food of your dreams.<\/em><\/p>\n<p><strong>Ingredients for the soup:<\/strong><\/p>\n<ul>\n<li>2 Tab olive oil<\/li>\n<li>1 lb sweet Italian sausage, casings removed<\/li>\n<li>3\u00a0garlic cloves, finely chopped<\/li>\n<li>1\u00a0small onion, finely chopped<\/li>\n<li>1\/2 c dry white wine<\/li>\n<li>1\u00a014.5-oz.\u00a0can whole plum tomatoes, crushed by hand<\/li>\n<li>2\u00a0c.\u00a0low-sodium chicken broth<\/li>\n<li>1\u00a0tsp.\u00a0dried oregano<\/li>\n<li>1\/2\u00a0tsp.\u00a0kosher salt, plus more to taste<\/li>\n<li>Pinch of red pepper flakes<\/li>\n<li>6\u00a0lasagna noodles, broken into 1- to 2-inch pieces<\/li>\n<li>4 c baby spinach<\/li>\n<li>1\/4 c fresh basil, chopped<\/li>\n<li>Italian bread, for serving<\/li>\n<\/ul>\n<p><strong>Ingredients for the ricotta dumplings:<\/strong><\/p>\n<ul>\n<li>1 c fresh ricotta cheese<\/li>\n<li>1\/2 c freshly grated parmesan cheese, plus more for topping<\/li>\n<li>1\/4 c fresh basil, shopped<\/li>\n<li>1\/4 tsp kosher salt<\/li>\n<li>Black pepper, to taste<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Make the soup:<\/p>\n<ol>\n<li>Heat the olive oil in a large Dutch oven over medium heat.<\/li>\n<li>Crumble in the sausage and cook, breaking it up with a wooden spoon, until lightly browned, about 3 minutes.<\/li>\n<li>Add the garlic and onion and cook until softened, 3 to 4 minutes.<\/li>\n<li>Add the wine, bring to a simmer and cook until reduced and syrupy, 2 to 3 minutes.<\/li>\n<li>Add the tomatoes, chicken broth and 3 cups water to the pot and bring to a simmer over medium heat.<\/li>\n<li>Stir in the oregano, salt and red pepper flakes.<\/li>\n<li>Bring to a simmer and cook until slightly thickened, about 7 minutes.<\/li>\n<li>Add the lasagna noodles and cook until just al dente, 6 to 7 minutes.<\/li>\n<li>Stir in the spinach and basil and cook until the spinach is wilted, about 3 minutes.
