Make it ahead of time, the flavors seem to get better after it&#8217;s chilled for a few hours.<br \/>\n<\/em><br \/>\n<strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/2 pkg (8 oz) penne pasta (or maybe something smaller)<\/li>\n<li>3 large heirloom tomatoes (about 2 pounds), seeded and chopped (be a big spender and double the tomatoes.)<\/li>\n<li>1 lb fresh mozzarella cheese, cut into 1\/2-inch pieces<\/li>\n<li>1\/2 c loosely packed basil leaves, chopped<\/li>\n<li>1 1\/2 c olive oil<\/li>\n<li>1\/2 c lemon juice (or white wine vinegar if you forgot to buy lemons)<\/li>\n<li>1 shallot, finely chopped (or a 1\/2 small sweet onion)<\/li>\n<li>2 garlic clove, minced<\/li>\n<li>1 Tab sugar<\/li>\n<li>3\/4 tsp salt<\/li>\n<li>1\/2 tsp grated lemon zest<\/li>\n<li>1\/4 tsp pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Cook pasta according to package directions.<\/li>\n<li>Drain.<\/li>\n<li>Rinse in cold water.<\/li>\n<li>Transfer to a large bowl.<\/li>\n<li>Gently stir in the tomatoes, cheese and basil.<\/li>\n<li>In a small bowl, whisk the remaining ingredients.\u00a0 (Or shake them in a jar)<\/li>\n<li>Drizzle over salad.<\/li>\n<li>Toss to coat.<\/li>\n<li>Refrigerate until serving.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>17<\/p>\n<p><strong>Source: <\/strong>Taste of Home &#8211; Debby Harden, Lansing, Michigan<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This easy Caprese pasta salad is always a favorite, especially when summer tomatoes are at their peak.
