Use it as a sandwich spread or dip but also as a filling for cocktail puffs or endive spears. Serve with Mint Juleps for Kentucky Derby party.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 medium cucumber<\/li>\n<li>1 8oz package, plus 1 3oz package, cream cheese, softened (11 oz)<\/li>\n<li>2 to 3 scallions, finely minced<\/li>\n<li>2 to 3 dashes Tabasco sauce<\/li>\n<li>\u00bd tsp salt, or to taste<\/li>\n<li>\u00bc tsp freshly ground white pepper<\/li>\n<li>2 Tab mayonnaise<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Peel the cucumber.<\/li>\n<li>Slice it in half lengthwise.<\/li>\n<li>Scrape out the seeds with a spoon.<\/li>\n<li>Using the coarse side of a hand grater, shred the flesh.<\/li>\n<li>Place in a kitchen towel and squeeze out excess moisture.<\/li>\n<li>Place the grated cucumber and the cream cheese in the bowl<br \/>\nof an electric mixer.<\/li>\n<li>Beat on medium speed until light and fluffy.<\/li>\n<li>Beat in two scallions.<\/li>\n<li>Season with Tabasco, salt and pepper.<\/li>\n<li>Taste and add more scallion if you like.<\/li>\n<li>Beat in the mayonnaise.<\/li>\n<li>Transfer to a covered bowl.<\/li>\n<li>Chill for a half-hour to allow the flavors to blend.<\/li>\n<li>Serve with crudit\u00e9s, chips or crackers.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> Maks about 2 cups<br \/>\n<strong>Source:\u00a0 <\/strong>Regina Schrambling Updated April 10, 2025<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Benedictine, a quintessential Louisville, Ky. dish, is a cream-cheese-and-cucumber spread named for Jennie Benedict, the turn-of-the-20th century caterer who created it.
