It&#8217;s delicious and versatile &#8211; perfect for tossing with salads, roasted vegetables, and more!\u00a0 No vinegar makes a difference.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>\u00bc c fresh lemon juice<br \/>\n1 small garlic clove, grated<br \/>\n1 tsp Dijon mustard<br \/>\n\u00bc tsp sea salt, more to taste<br \/>\nFreshly ground black pepper<br \/>\n\u00bd tsp honey, or maple syrup, optional (honey used)<br \/>\n\u00bc to \u2153 c extra-virgin olive oil<br \/>\n\u00bd tsp fresh or dried thyme, optional (not used)<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>In a small bowl, whisk together the lemon juice, garlic, mustard, salt, pepper, and honey, if using.<\/li>\n<li>Drizzle in the olive oil while whisking and continue to whisk until the dressing is emulsified. Alternatively, combine everything in a jar with a tight-fitting lid and shake to combine.<\/li>\n<li>If your dressing is too tangy, add more olive oil, to taste.<\/li>\n<li>Add the thyme, if desired, and season to taste.<\/li>\n<li>Store in the fridge for up to 1 week. The olive oil will solidify a bit in the fridge.
