{"id":11079,"date":"2025-12-27T00:56:09","date_gmt":"2025-12-27T07:56:09","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=11079"},"modified":"2025-12-27T00:56:09","modified_gmt":"2025-12-27T07:56:09","slug":"chicken-enchilada-casserole","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chicken-enchilada-casserole.html","title":{"rendered":"Chicken Enchilada Casserole"},"content":{"rendered":"<p><em>It&#8217;s a weeknight winner!\u00a0 Open cans, open packages, cut tortillas in half &#8211; not too labor intensive.<br \/>\n<\/em><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 Tab oil<\/li>\n<li>3 garlic cloves, finely chopped (could come in a jar)<\/li>\n<li>1 jalape\u00f1o, seeded and finely chopped, optiomal<\/li>\n<li>1 large onion, diced (could be from the freezer section)<\/li>\n<li>3 c (1 lb) shredded cooked chicken (you know &#8211; from Coscto)<\/li>\n<li>2 (4-ounce) cans diced green chiles<\/li>\n<li>1\/2 tsp. paprika<\/li>\n<li>Kosher salt, to taste<\/li>\n<li>Black pepper, to taste<\/li>\n<li>1 30-ounce can green enchilada sauce<\/li>\n<li>2\/3 c sour cream (2 lg scoops, mor2 or less.\u00a0 Don&#8217;t dirty a measuring cup)<\/li>\n<li>18 corn tortillas, cut in half<\/li>\n<li>3 c grated Monterey jack cheese (about 12 ounces) (that comes packaged too) (or maybe whatever grated cheese you have)<\/li>\n<li>Fresh cilantro, chopped, for serving\u00a0 &#8211; if you like celantro.<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 350\u00b0.<\/li>\n<li>In a large skillet, heat the oil over medium heat.<\/li>\n<li>Add the garlic, jalape\u00f1o, and onion.<\/li>\n<li>Saut\u00e9 until softened, about 3 minutes.<\/li>\n<li>Stir in the chicken, green chiles, paprika, and a pinch each of salt and pepper.<\/li>\n<li>Reserve 1\/2 cup of the enchilada sauce.<\/li>\n<li>Pour the remaining sauce into the skillet, stirring to combine.<\/li>\n<li>Cook until warmed through, 1 to 2 minutes.<\/li>\n<li>Turn offthe heat.<\/li>\n<li>Stir in the sour cream.<\/li>\n<li>Spread the reserved 1\/2 cup enchilada sauce in the bottom of a 9-by-13-inch baking dish.<\/li>\n<li>Line the bottom of the dish with 12 tortilla halves, overlapping as necessary to cover.<\/li>\n<li>Spread with one third of the chicken mixture.<\/li>\n<li>Sprinkl\u00a0 with 1 cup of the monterey jack cheese.<\/li>\n<li>Repeat to make 2 more layers of the tortillas, chicken mixture, and cheese. You should have 3 layers total.<\/li>\n<li>Bake until bubbling and golden brown, 30 to 35 minutes.
