{"id":1110,"date":"2014-11-15T15:05:09","date_gmt":"2014-11-15T22:05:09","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1110"},"modified":"2015-04-01T17:17:56","modified_gmt":"2015-04-01T23:17:56","slug":"sourdough-starter","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/sourdough-starter.html","title":{"rendered":"Sourdough Starter"},"content":{"rendered":"<p><em>Actually quite easy &#8211; I have done this with 4th graders studying the gold rush in California. \u00a0What you are doing is capturing wild yeast. \u00a0You can experiment by placing jars of milk in different places &#8211; your house, a friend across town, etc. \u00a0You should be able to taste a difference.<\/em><\/p>\n<p><strong>Starter Ingredients:<\/strong><\/p>\n<ul>\n<li>1 c milk<\/li>\n<li>1 c flour<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Place milk in a glass jar or bowl.<\/li>\n<li>Cover with cheesecloth.<\/li>\n<li>Let it sit for 24 hours.<\/li>\n<li>Add flour and stir.<\/li>\n<li>Let it sit out in the open (best outside) for 5 to 7 days.<\/li>\n<\/ol>\n<p>It will get disgusting looking and smell like a winery. \u00a0That is good &#8211; it is fermenting and that is what makes it &#8220;sour&#8221;. \u00a0The liquid is actually &#8220;hooch&#8221;.<\/p>\n<p><strong>Primary batter:<\/strong><\/p>\n<ul>\n<li>1 c sourdough starter (from the jar you have stirred a bit)<\/li>\n<li>1 1\/2 \u00a0c flour<\/li>\n<li>1 c warm water<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Mix in a large bowl.<\/li>\n<li>Cover with plastic wrap.<\/li>\n<li>Place in a warm, draft free area for about 12 hours for proofing. \u00a0It\u00a0should get bubbly.<\/li>\n<li>Stir.<\/li>\n<li>Remove one cup and put back in the starter container for next time.<\/li>\n<\/ol>\n<p>Use to make biscuits, bread, pancakes, waffles, whatever.<\/p>\n<p><strong>Source: \u00a0<\/strong>Ginger Kleerup<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Actually quite easy &#8211; I have done this with 4th graders studying the gold rush in California. \u00a0What you are doing is capturing wild yeast. \u00a0You can experiment by placing jars of milk in different places &#8211; your house, a friend across town, etc. \u00a0You should be able to taste a difference.
