{"id":11202,"date":"2026-05-23T12:35:30","date_gmt":"2026-05-23T18:35:30","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=11202"},"modified":"2026-05-23T12:35:30","modified_gmt":"2026-05-23T18:35:30","slug":"easy-three-ingredient-tomato-soup","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/easy-three-ingredient-tomato-soup.html","title":{"rendered":"Easy Three Ingredient Tomato Soup"},"content":{"rendered":"<p><em>I count five ingredients, but it&#8217;s still quick and easy.\u00a0 Makes you think of adding corn, or broccoli, or cooked ground beef, or diced chicken, or, or, or.\u00a0\u00a0<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 Tab butter (57g)<\/li>\n<li>\u00bd a large onion, cut into large wedges<\/li>\n<li>1 (28-ounce) can whole peeled or crushed tomatoes.<\/li>\n<li>1 \u00bd c water, low sodium vegetable stock, or chicken stock<\/li>\n<li>\u00bd tsp fine sea salt, or more to taste<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Melt the butter over medium heat in a Dutch oven or large saucepan.<\/li>\n<li>Add onion wedges, water\/stock, tomatoes with their juices, and 1\/2 teaspoon of salt.<\/li>\n<li>Bring to a simmer.<\/li>\n<li>Cook, uncovered, for about 40 minutes.<\/li>\n<li>Stir occasionally and add additional salt as needed.<\/li>\n<li>Blend the soup, and then season to taste. The soup doesn\u2019t need to be ultra-smooth; some texture is nice. An immersion blender does make quick work of this, or you can use a blender, but not a food processor.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0 <\/strong>2 to 3<br \/>\n<strong>Source:\u00a0 <\/strong>inspiredtaste.net\/27956\/easy-tomato-soup<\/p>\n<p><strong>Note:<br \/>\n<\/strong>If using a blender, remove the lid\u2019s center insert and cover the opening with a kitchen towel while blending. This releases steam and prevents messy splatters.<br \/>\nEven better, make the soup earily and let cool before blending.<br \/>\nFresh tomatoes: Use 10 to 12 medium tomatoes (2 pounds).
