Dijon mustard<\/li>\n<li>1\/2 c chopped fresh parsley<\/li>\n<li>1\/4 c chopped fresh chives<\/li>\n<\/ul>\n<p><strong>Directions<\/strong>:<\/p>\n<ol>\n<li>Preheat the oven to 400\u00b0.<\/li>\n<li>Put the\u00a0 carrots in a large bowl.<\/li>\n<li>Drizzle with the olive oil.<\/li>\n<li>Sprinkle with the thyme, salt and a few grinds of pepper.<\/li>\n<li>Toss well to coat.<\/li>\n<li>Divide between 2\u00a0 baking sheets, spread\u00a0 the carrots in an even layer.<\/li>\n<li>Roast, switching the position of the pans halfway through, until the\u00a0 carrots are browned and tender, about 30 minutes.<\/li>\n<li>Meanwhile, melt the butter in a\u00a0 small skillet over medium heat.<\/li>\n<li>Whisk in the honey, vinegar and\u00a0 a pinch of salt.<\/li>\n<li>Bring to a boil.<\/li>\n<li>Cook until just slightly thickened, 1 to 2 minutes.<\/li>\n<li>Remove the from the heat.<\/li>\n<li>Whisk in the mustard.<\/li>\n<li>Then whisk\u00a0 in the parsley and chives,\u00a0 reserving a tablespoon of each for garnish.<\/li>\n<li>Transfer the roasted carrots back to the bowl.<\/li>\n<li>Drizzle with the honey-herb butter.<\/li>\n<li>Toss well.<\/li>\n<li>Transfer to a serving dish.<\/li>\n<li>Srinkle with the reserved parsley and chives.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong> 8-10<br \/>\n<strong>Source:\u00a0 <\/strong>Ree Drummond via Mary Oswell. &#8211; Thanksgivin 2025<\/p>\n","protected":false},"excerpt":{"rendered":"<p>They&#8217;re sweet and savory!
