The peas and asparagus bring freshnessand the feta adds\u00a0 hints of tang and saltiness that work well with the herbaceous yogurt dressing.\u00a0 For a not-so-spicy dressing try the Creamy Parsley Dressing.\u00a0 I added a small jar of marinated mushrooms for even more goodies.<br \/>\n<\/em><strong>Ingredients for the salad:<\/strong><\/p>\n<ul>\n<li>Salt and black pepper<\/li>\n<li>2 c frozen peas<\/li>\n<li>16 to 20 asparagus spears, trimmed and sliced into 1-inch pieces<\/li>\n<li>1 (1\u00bd-pound) medium head iceberg lettuce<\/li>\n<li>6 ounces feta, drained and broken into chunks<\/li>\n<li>Handful of cilantro leaves, for serving<br \/>\n<strong>Directions for the salad:\u00a0<\/strong><\/li>\n<\/ul>\n<ol>\n<li>\u00a0Blanch the frozen peas and asparagus for 1 to 2 minutes until the asparagus and peas are bright green and crisp tender.<\/li>\n<li>Drain and run under cold water until they are cold.<\/li>\n<li>Leave to drain.<\/li>\n<li>Remove the outer layer of the lettuce and discard.<\/li>\n<li>Remove the core of the lettuce.<\/li>\n<li>Tear the lettuce into large chunks.<\/li>\n<li>Wash the leaves and allow them to dry in a colander.<\/li>\n<li>Pat them dry with a clean kitchen towel.<br \/>\n<strong>To serve:\u00a0 <\/strong>Serve as one large salad or divide among four individual serving plates.<\/li>\n<\/ol>\n<ol>\n<li>Add the lettuce chunks to the plate.<\/li>\n<li>Scatter the asparagus and peas on top and around the lettuce.<\/li>\n<li>Spoon the salad dressing all over the vegetables.<\/li>\n<li>Dot with feta.<\/li>\n<li>Squeeze the juice from the lemon half over everything.<\/li>\n<li>Season with salt and black pepper.<\/li>\n<li>Top with a few cilantro leaves.<\/li>\n<\/ol>\n<p><strong>Yield:<\/strong> 4 &#8211; 6 servings<br \/>\n<strong>Source:\u00a0 <\/strong>Somewhat based on New York Times Cooking, Hetty Lui McKinnon<\/p>\n<p style=\"text-align: center;\"><strong>Spicy Cilantro Yogurt<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 c full-fat Greek yogurt<\/li>\n<li>1 c chopped cilantro (leaves and tender stems from about \u00bd bunch)<\/li>\n<li>2 Tab olive oil<\/li>\n<li>Juice of \u00bd lemon or lime (1 to 2 tablespoons)<\/li>\n<li>1 garlic clove, peeled and roughly chopped<\/li>\n<li>1 teaspoon kosher salt<\/li>\n<li>1 to 2 jalape\u00f1os or serrano chiles, trimmed and roughly chopped<br \/>\n<strong>Directions:<\/strong><\/li>\n<\/ul>\n<ol>\n<li>Add the yogurt, cilantro, olive oil, lemon juice, garlic, salt and 1<br \/>\njalape\u00f1o to a blender or small food processor.<\/li>\n<li>Blitz until smooth.
