{"id":11849,"date":"2026-07-05T14:37:54","date_gmt":"2026-07-05T20:37:54","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=11849"},"modified":"2026-07-05T14:37:54","modified_gmt":"2026-07-05T20:37:54","slug":"mud-hen-bars","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/mud-hen-bars.html","title":{"rendered":"Mud Hen Bars"},"content":{"rendered":"<p><em>This classic dessert deserves a spot in your recipe box.\u00a0 Wonderful with homemade vanilla ice cream.<\/em><\/p>\n<p><strong>Base Layer Ingredients:<\/strong><\/p>\n<ul>\n<li>Nonstick cooking spray<\/li>\n<li>4 eggs &#8211; divided<\/li>\n<li>1\/2 c salted butter, softened (1\/4 lb)<\/li>\n<li>1 c granulated sugar<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>1\/2 tsp. salt<\/li>\n<li>11\/2 tsp. vanilla &#8211; divided<\/li>\n<li>11\/2 c all-purpose flour<\/li>\n<\/ul>\n<p><strong>Middle Layer Ingredients:<\/strong><\/p>\n<ul>\n<li>1 cup bittersweet chocolate chips<\/li>\n<li>1 cup miniature marshmallows<\/li>\n<li>1\/2 cup chopped pecans, toasted (optional)<\/li>\n<\/ul>\n<p><strong>Top Layer Ingredients:<\/strong><\/p>\n<ul>\n<li>1 cup packed brown sugar<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>Lightly coat a 13&#215;9-inch baking pan with cooking spray.<\/li>\n<li>Separate two of the eggs, placing 2 egg whites in a clean medium bowl. Save the egg yolks.<\/li>\n<li>In a large bowl beat butter with an electric mixer on medium 30 seconds.<\/li>\n<li>Add granulated sugar, baking powder, and salt.<\/li>\n<li>Beat until fluffy.<\/li>\n<li>Beat in 2 whole eggs, the 2 egg yolks and 1tsp. vanilla until smooth.<\/li>\n<li>Beat flour into butter mixture on low until just combined.<\/li>\n<li>Transfer mixture to prepared pan.<\/li>\n<li>Spread to an even layer.<\/li>\n<li>Top with chocolate chips, mini marshmallows, and pecans (if using)<\/li>\n<li>Beat the remaining 2 egg whites on high until stiff peaks form, about 2 minutes.<\/li>\n<li>Fold in brown sugar and remaining 1\/2 tsp. vanilla until combined and there are no lumps.<\/li>\n<li>Spread on top of chocolate chip layer.<\/li>\n<li>Bake 20 minutes or until top is golden brown.<\/li>\n<li>Let cool completely on a wire rack before cutting into squares.<\/li>\n<\/ol>\n<p><strong>Servings:<\/strong> 24<br \/>\n<strong>Source: <\/strong><a href=\"http:\/\/www.bhg.com\">bhg.com<\/a>.\u00a0\u00a0 Recipe developed by Sarah Brekke.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This classic dessert deserves a spot in your recipe box.\u00a0 Wonderful with homemade vanilla ice cream.
