It&#8217;s easy, cheesy, and picky eater approved!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 lbs or so medium zucchini and\/or yellow summer squash<\/li>\n<li>2 tsp dried basil<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 tsp dried thyme<\/li>\n<li>1 tsp garlic powder<\/li>\n<li>1\/4 c dried onions<\/li>\n<li>1\u00a0 c shredded cheese mozzarella<\/li>\n<li>1 c shredded cheddar (or cheddar-jack mix &#8211; you know, the stuff from Costco)<\/li>\n<li>3\/4 c shredded Parmesan cheese<\/li>\n<li>chives<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 425\u00b0.<\/li>\n<li>Spray a medium baking dish with cooking spray or oil<\/li>\n<li>Wash the squash.<\/li>\n<li>Cut in 1\/2 inch slices &#8211; half-moon or whole.\u00a0 You are looking for large bite size chunks.<\/li>\n<li>In a large plastic bag, combine the\u00a0 basil, salt, dried thyme, garlic powder, onions, 1 cup mozzarella 1 cup cheddar cheese and 1\/2 cup Parmesan.<\/li>\n<li>Shake to mix.<\/li>\n<li>Add the zucchini.<\/li>\n<li>Shake together until the veggies are coated with cheese and the herbs are well-distributed.<\/li>\n<li>Put the mixture in the prepared baking dish. Dish should be piled about 2-3 inches deep &#8211; not a single layer.<\/li>\n<li>Drizzle with 1-2 tab\u00a0 melted butter.<\/li>\n<li>Bake uncovered for about 25-30 minutes, or slightly longer until zucchini is mostly tender; check by piercing a piece of zucchini with a fork.<\/li>\n<li>Remove the dish out of the oven.<\/li>\n<li>Sprinkle with the remaining\u00a0 cheese .<\/li>\n<li>Put the dish back in the oven.<\/li>\n<li>Bake 10-15 minutes longer, or until the cheese is melted and nicely browned and zucchini is fully cooked.<\/li>\n<li>Garnish with chopped chives.<\/li>\n<li>Enjoy!<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>6 &#8211; 8<br \/>\n<strong>Source:<\/strong> Based on a recipe from dashingdish<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This Cheesy Zucchini Casserole consists of sliced zucchini tossed in a bag with cheese and herbs.
