{"id":1232,"date":"2015-01-11T04:50:30","date_gmt":"2015-01-11T11:50:30","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1232"},"modified":"2020-02-19T15:01:15","modified_gmt":"2020-02-19T22:01:15","slug":"cornish-hens-with-sweet-vermouth-garlic-glaze","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/cornish-hens-with-sweet-vermouth-garlic-glaze.html","title":{"rendered":"Cornish Hens with Sweet Vermouth Garlic Glaze"},"content":{"rendered":"<p><em>Forgot about Cornish game hens didn&#8217;t you. \u00a0They are still in the market and make a really impressive dinner.<\/em><\/p>\n<div id=\"Section3\" dir=\"LTR\">\n<p align=\"LEFT\"><b>Cornish Hens I<\/b><b>ngredients: <\/b><\/p>\n<ul>\n<li>5 \u2013 6 Cornish hens, halved lengthwise through breast<\/li>\n<li>1 tsp salt<\/li>\n<li>1 tsp pepper<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Cornish Hens Directions:<\/b><\/p>\n<ol>\n<li>Place hens, cut side down, in a heavy shallow roasting pan<\/li>\n<li>Pat hens dry and sprinkle with salt and pepper.<\/li>\n<li>Put oven rack in middle position and preheat oven to 450\u00b0<\/li>\n<li>Roast until just cooked through, about 30 minutes.<\/li>\n<li>Brush glaze on hens and roast 5 minutes more.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Glaze Ingredients:<\/b><\/p>\n<ul>\n<li>3 c sweet (red) vermouth<\/li>\n<li>18 large garlic cloves, quartered lengthwise<\/li>\n<li>6 fresh or dried thyme sprigs (place in tea ball for easy removal)<\/li>\n<li>1 c water<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Glaze Directions:<\/b><\/p>\n<ol>\n<li>Simmer vermouth, garlic, thyme and water uncovered until garlic is soft, about 15 minutes.<\/li>\n<li>Discard thyme.<\/li>\n<li>Mash garlic into sauce with a fork.<\/li>\n<li>Simmer until reduced to a glaze \u2013 about 1 cup.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>10 \u2013 12<\/p>\n<p align=\"LEFT\"><b>Source: <\/b>VPWL Gourmet, October 2004<\/p>\n<p align=\"CENTER\">\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Forgot about Cornish game hens didn&#8217;t you. \u00a0They are still in the market and make a really impressive dinner.
