{"id":1392,"date":"2015-01-23T19:38:03","date_gmt":"2015-01-24T02:38:03","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1392"},"modified":"2015-04-03T14:18:17","modified_gmt":"2015-04-03T20:18:17","slug":"lamb-lollipops-with-rosemary-balsamic-reduction","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/lamb-lollipops-with-rosemary-balsamic-reduction.html","title":{"rendered":"Lamb Lollipops with Rosemary Balsamic Reduction"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>Actually, you should hide these in the kitchen and eat them all yourself!<\/em><\/p>\n<p align=\"LEFT\"><b>Lamb Ingredients:<\/b><\/p>\n<div id=\"Section11\" dir=\"LTR\">\n<ul>\n<li>6 Tab extra-virgin olive oil<\/li>\n<li>4 Tab finely chopped parsley leaves<\/li>\n<li>2 Tab finely chopped rosemary leaves<\/li>\n<li>2 tsp minced garlic<\/li>\n<li>1 Tab Kosher salt<\/li>\n<li>15 small rib lamb chops with bones attached, ribs frenched<\/li>\n<li>2 tsp black pepper<\/li>\n<\/ul>\n<p align=\"LEFT\"><strong>Lamb Directions:<\/strong><\/p>\n<ol>\n<li>In a small bowl, combine olive oil, parsley, rosemary, and garlic.<\/li>\n<li>Season with salt, to taste. Set herb oil mixture aside.<\/li>\n<li>Set a 12-inch pan over medium-high heat.<\/li>\n<li>Season the lamb with salt and black pepper.<\/li>\n<li>Add 2 Tab of the herb oil to the pan.<\/li>\n<li>Sear the lamb until golden brown, about 3 minutes.<\/li>\n<li>Continue to cook the lamb, about 2 minutes each side, until medium rare.<\/li>\n<li>Baste them with 2 Tab herb and oil mixture.<\/li>\n<\/ol>\n<p align=\"LEFT\">(Alternatively, you can grill the lamb chops.)<\/p>\n<p><b>Reduction Ingredients:<\/b><\/p>\n<\/div>\n<div id=\"Section12\" dir=\"LTR\">\n<ul>\n<li>2 Tab herb olive oil (from above)<\/li>\n<li>2 Tab minced shallots<\/li>\n<li>1 tsp garlic<\/li>\n<li>1 c balsamic vinegar<\/li>\n<li>1 large or 2 small rosemary sprigs<\/li>\n<li>2 Tab butter<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Reduction Directions:<\/b><\/p>\n<ol>\n<li>Place 2 Tab herb olive oil in a 1-quart saucepan over medium heat.<\/li>\n<li>Once the oil is hot, add the shallots, cook until translucent, about 1 min.<\/li>\n<li>Add the garlic to the pan and cook for 30 seconds.<\/li>\n<li>Pour the balsamic vinegar into the pan and bring to a boil.<\/li>\n<li>Add the rosemary and allow the balsamic to gently boil and reduce until only about 1\/4 cup of balsamic remains, about 10 minutes.<\/li>\n<li>Season with 1 teaspoon of salt and 1\/2 teaspoon of black pepper.<\/li>\n<li>Remove from the heat and swirl the butter into the pan.<\/li>\n<li>Remove the rosemary sprigs before using.<\/li>\n<\/ol>\n<p align=\"LEFT\">To serve, drizzle lamb chops with the balsamic reduction.<\/p>\n<p align=\"LEFT\"><b>Serves: <\/b>Makes 15<\/p>\n<p align=\"LEFT\"><b>Comment: <\/b> To french lamb chops see The Hungry Mouse<\/p>\n<p align=\"LEFT\"><span lang=\"zxx\"><a href=\"http:\/\/www.thehungrymouse.com\/2009\/02\/23\/rib-of-the-week-garlic-rosemary-lamb-lollipop-chops\/\">http:\/\/www.thehungrymouse.com\/2009\/02\/23\/rib-of-the-week-garlic-rosemary-lamb-lollipop-chops\/<\/a><\/span><\/p>\n<p align=\"LEFT\">If you want to be really fancy, you can make frills for the chops.<\/p>\n<p align=\"LEFT\"><span lang=\"zxx\"><a href=\"http:\/\/www.google.com\/url?sa=t&amp;rct=j&amp;q=&amp;esrc=s&amp;source=web&amp;cd=2&amp;ved=0CFUQtwIwAQ&amp;url=http%3A%2F%2Fwww.youtube.com%2Fwatch%3Fv%3Dzy17KmfqZfU&amp;ei=PDuqUsrbILKk2gXstoGQDQ&amp;usg=AFQjCNHR4GsQV5OoEWh3Vu13k63rjuk7og&amp;sig2=IiwEY6q88ZEJbmX7zYVxuw&amp;bvm=bv.57967247,d.b2I\">How to Make Paper Frills for a Crown Roast &#8211; YouTube<\/a><\/span><\/p>\n<p align=\"LEFT\"><b>Source: <\/b>FoodNetwork.com, Emeril Lagasse, 2006<\/p>\n<p align=\"LEFT\"><a name=\"mh4fzD7JAJ-6hM%252525252525253A\"><\/a><\/p>\n<p align=\"CENTER\">\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Actually, you should hide these in the kitchen and eat them all yourself!
