{"id":1403,"date":"2015-01-26T15:13:19","date_gmt":"2015-01-26T22:13:19","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1403"},"modified":"2015-04-03T14:29:18","modified_gmt":"2015-04-03T20:29:18","slug":"southwestern-margarita-quesadillas-with-lime-cilantro-cream","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/southwestern-margarita-quesadillas-with-lime-cilantro-cream.html","title":{"rendered":"Southwestern Margarita Quesadillas  with Lime Cilantro Cream"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>These are a bit of work but can be done in stages, cook the chicken, make the Lime Cilantro Cream the day before and assemble for the party.<\/em><\/p>\n<p><b>Ingredients \u2013 Quesadilla:<\/b><\/p>\n<ul>\n<li>2 boneless, skinless chicken breast halves<\/li>\n<li>1 c bottled margarita mix (Jose Cuervo is good)<\/li>\n<li>2 Tab fresh lemon juice<\/li>\n<li>2 Tab fresh lime juice<\/li>\n<li>1 Tab garlic powder<\/li>\n<li>Vegetable oil<\/li>\n<li>10 flour tortillas (7-8 inches, thin is better)<\/li>\n<li>1 c shredded jack cheese<\/li>\n<li>1 c shredded cheddar cheese<\/li>\n<li>Lime Cilantro Cream<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><b>Directions:<\/b><\/p>\n<ol>\n<li>Place chicken breasts between layers of wax paper and pound to less than 1\/2-in thick.<\/li>\n<li>Place in a gallon freezer bag with margarita mix, lemon juice, lime juice and garlic powder.<\/li>\n<li>Refrigerate for at least 2 hours.<\/li>\n<li>Preheat oven to 350\u00b0.<\/li>\n<li>Remove chicken from marinade and discard marinade.<\/li>\n<li>Heat a tablespoon of vegetable oil in a large skillet and saute chicken until browned, about 3 minutes per side.<\/li>\n<li>Place in a heatproof dish and cook in oven until cooked through and internal temperature reaches 175\u00b0, about 10-15 minutes.<\/li>\n<li>Remove from oven and let sit for 5 minutes.<\/li>\n<li>Shred chicken.<\/li>\n<li>On half of a tortilla place about a tablespoon of each cheese and about 1\/10<sup>th<\/sup> of the chicken.<\/li>\n<li>Fold in half and brush with vegetable oil.<\/li>\n<li>Place in a heated skillet and cook until lightly browned on each side.<\/li>\n<li>Place on a large baking sheet and repeat with remaining tortillas.<\/li>\n<li>Prior to serving, reheat on a baking sheet in a 350\u00b0 oven for 10 minutes.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p align=\"CENTER\"><b>Lime Cilantro Cream<\/b><\/p>\n<p>&nbsp;<\/p>\n<p><b>Ingredients &#8211; Lime Cilantro Cream:<\/b><\/p>\n<ul>\n<li>1\/2 c sour cream<\/li>\n<li>1\/4 c chopped cilantro<\/li>\n<li>Juice of 1\/2 lime<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p><b>Lime Cilantro Directions:<\/b><\/p>\n<p>Mix sour cream, cilantro, lime juice and salt.<\/p>\n<p><b>To serve: \u00a0<\/b>Cut each quesadilla in 4 wedges and drizzle with Lime Cilantro Cream.<\/p>\n<p align=\"LEFT\"><b>Serves: <\/b> 40 pieces<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> allrecipes,com<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>These are a bit of work but can be done in stages, cook the chicken, make the Lime Cilantro Cream the day before and assemble for the party.
