{"id":1423,"date":"2015-01-31T06:53:58","date_gmt":"2015-01-31T13:53:58","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1423"},"modified":"2016-01-25T13:50:59","modified_gmt":"2016-01-25T20:50:59","slug":"eggnog-cookies","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/eggnog-cookies.html","title":{"rendered":"Eggnog Cookies"},"content":{"rendered":"<div id=\"Section13\" dir=\"LTR\">\u00a0<em>Nice Christmas cookie &#8211; it is hard to find eggnog the rest of the year.<\/em><\/div>\n<p style=\"text-align: left\" align=\"CENTER\"><a name=\"fb-comments1\"><\/a><b>Cookie Ingredients:<\/b><\/p>\n<ul>\n<li>2 1\/4 c flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1\/2 tsp ground cinnamon<\/li>\n<li>1\/2 tsp ground nutmeg<\/li>\n<li>1 1\/4 c white sugar<\/li>\n<li>3\/4 c butter, softened (1 and \u00bd sticks)<\/li>\n<li>1\/2 c eggnog<\/li>\n<li>1 tsp vanilla<\/li>\n<li>2 large egg yolks<\/li>\n<li>Eggnog Frosting<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Cookie Directions:<\/b><\/p>\n<ol>\n<li>Preheat oven to 300\u00b0.<\/li>\n<li>In a bowl, combine the first four ingredients.<\/li>\n<li>In a large bowl, cream together the sugar and butter until it resembles a grainy paste.<\/li>\n<li>Add eggnog, vanilla and egg yolks and beat at medium speed until smooth.<\/li>\n<li>Add the flour mixture and beat at low speed until blended. Do not over mix.<\/li>\n<li>Drop by teaspoons (1 oz) onto ungreased baking sheet, 1 inch apart.<\/li>\n<li>Sprinkle lightly with additional nutmeg.<\/li>\n<li>Bake for 23-25 minutes or until bottoms turn light brown.<\/li>\n<li>Transfer from pans to rack immediately to cool.<\/li>\n<li>When cool, frost with Eggnog Frosting.<\/li>\n<\/ol>\n<p align=\"CENTER\"><b>Eggnog Cream Cheese Frosting<\/b><\/p>\n<p align=\"LEFT\"><b>Frosting Ingredients:<\/b><\/p>\n<ul>\n<li>4 oz cream cheese, softened<\/li>\n<li>4 oz salted butter, softened<\/li>\n<li>1 tsp vanilla extract (or rum extract or spiced rum)<\/li>\n<li>1\/4 c eggnog<\/li>\n<li>2 1\/2 c powdered sugar<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Frosting Directions:<\/b><\/p>\n<ol>\n<li>Mix softened cream cheese and butter together.<\/li>\n<li>Whip in vanilla extract.<\/li>\n<li>Add half of the eggnog and powdered sugar and mix until blended.
