The German ladies would all contribute dishes to church socials, and this one was his grandmother&#8217;s\u00a0specialty. We made it for\u00a0the Twelfth Night party that he and Jackie hosted, and consensus was it was pretty darned good.<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Salad:<\/p>\n<ul>\n<li>10 medium potatoes, cooked, peeled, sliced.<\/li>\n<li>4 hard-cooked eggs, chopped<\/li>\n<li>4 stalks celery, chopped<\/li>\n<li>2 small onions, chopped<\/li>\n<\/ul>\n<p>Dressing (see note below):<\/p>\n<ul>\n<li style=\"padding-left: 30px;\">4 slices bacon, diced<\/li>\n<li style=\"padding-left: 30px;\">1\/3 cup water<\/li>\n<li style=\"padding-left: 30px;\">2 tbsp corn starch<\/li>\n<li style=\"padding-left: 30px;\">\u00bd-\u00be cup sugar<\/li>\n<li style=\"padding-left: 30px;\">\u00bd tsp salt<\/li>\n<li style=\"padding-left: 30px;\">\u00bc tsp pepper<\/li>\n<li style=\"padding-left: 30px;\">1\/3 cup vinegar<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Combine potatoes, eggs, celery, onion in a large bowl; mix gently.<\/li>\n<li>Cook bacon in skillet until crisp.<\/li>\n<li>Combine water and corn starch, mixing well<\/li>\n<li>Stir corn starch mixture, sugar, salt, pepper, and vinegar into skillet.<\/li>\n<li>Cook over medium heat, stirring constantly, until thick.<\/li>\n<li>Pour dressing over potato mixture; mix gently.<\/li>\n<li>Cover and chill overnight.<\/li>\n<li>Spoon into a dutch oven.<\/li>\n<li>Cook over low heat until thoroughly heated. Serve immediately.<\/li>\n<\/ol>\n<p><strong>Servings<\/strong>: 12<\/p>\n<p><strong>Notes<\/strong>:<\/p>\n<ul>\n<li>A note on the handwritten recipe suggests doubling the dressing recipe.<\/li>\n<li>One question that came up during cooking was\u00a0how much of the bacon fat to retain in the dressing.
