{"id":1543,"date":"2015-02-12T14:30:24","date_gmt":"2015-02-12T21:30:24","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1543"},"modified":"2015-04-03T15:53:00","modified_gmt":"2015-04-03T21:53:00","slug":"quinoa-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/quinoa-salad.html","title":{"rendered":"Quinoa Salad"},"content":{"rendered":"<p><em>Works as a starch or salad side dish. \u00a0And it can be make the day before!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 \u00be c red quinoa (12 oz package)<\/li>\n<li>2 c dried cranberries<\/li>\n<li>2 c small green beans<\/li>\n<li>\u00bd c walnuts, chopped<\/li>\n<li>\u00bd c green onions, sliced<\/li>\n<li>1\/3 c balsamic vinegar<\/li>\n<li>\u00bc c olive oil<\/li>\n<li>4 cloves garlic, minced<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>\u00bd tsp pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Cook quinoa according to package directions.<\/li>\n<li>Fluff with a fork and let cool.<\/li>\n<li>Blanch green beans for 2 minutes, then cut into 1 inch pieces.<\/li>\n<li>Combine vinegar, oil, garlic, salt, and pepper.<\/li>\n<li>Add quinoa, cranberries, walnuts, onion, and green beans and toss.<\/li>\n<\/ol>\n<p>May be served cold or at room temperature.<\/p>\n<p><strong>Serves:<\/strong> 10-12<\/p>\n<p><strong>Source:<\/strong> Donna doesn&#8217;t remember<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Works as a starch or salad side dish. \u00a0And it can be make the day before!
