{"id":1584,"date":"2015-02-17T05:15:51","date_gmt":"2015-02-17T12:15:51","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1584"},"modified":"2015-02-17T05:15:51","modified_gmt":"2015-02-17T12:15:51","slug":"herbed-green-beans-with-feta","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/herbed-green-beans-with-feta.html","title":{"rendered":"Herbed Green Beans with Feta"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>OK, so it is another green bean recipe, but this is not that much work and quite good &#8211; and different.<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>2 lbs green beans, trimmed<\/li>\n<li>kosher salt<\/li>\n<li>\u00bc c olive oil<\/li>\n<li>4 Tab fresh mint leaves, torn (divided)<\/li>\n<li>2 Tab fresh dill, chopped (divided)<\/li>\n<li>2 Tab matchstick size strips of lemon zest (divided)<\/li>\n<li>2 Tab fresh lemon juice<\/li>\n<li>2 oz feta, crumbled (about \u00bd cup) (divided)<\/li>\n<li>fresh ground black pepper<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Working in two batches, cook beans in a large pot of boiling, generously salted water just until crisp-tender, about 5 minutes.<\/li>\n<li>Using tongs, transfer to a colander set in a bowl of ice water; let cool.<\/li>\n<li>Drain well, then pat dry with paper towels.<\/li>\n<li>Toss beans, oil, 2 tablespoons mint, 1 tablespoon dill, 1 tablespoon lemon zest, 2 tablespoons lemon juice, and half of feta in a large bowl.<\/li>\n<li><span style=\"line-height: 1.5\">Season with salt, pepper, and more lemon juice, if desired.<\/span><\/li>\n<li>Serve beans topped with remaining feta, 2 tablespoons mint, 1 tablespoon dill, and<span style=\"line-height: 1.5\">1 tablespoon lemon zest.<\/span>\n<p align=\"LEFT\"><b>Serves: <\/b>10<\/p>\n<p align=\"LEFT\"><b>Source: <\/b>Bon App\u00e9tite, August 2013 Rebecca Jurkevich<\/p>\n<p align=\"LEFT\"><b>Comments: <\/b><em>Beans can be cooked 1 day ahead.
