{"id":1681,"date":"2015-02-24T05:31:09","date_gmt":"2015-02-24T12:31:09","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1681"},"modified":"2016-05-20T16:09:38","modified_gmt":"2016-05-20T22:09:38","slug":"leek-ricotta-and-walnut-pizza","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/leek-ricotta-and-walnut-pizza.html","title":{"rendered":"Leek, Ricotta, and Walnut Pizza"},"content":{"rendered":"<p style=\"text-align: left;\" align=\"CENTER\"><em>And can&#8217;t you come up with a hundred other good things to put on a cocktail pizza?<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>3 fresh wheat pizza dough (Trader Joe&#8217;s)<\/li>\n<li>cooking spray<\/li>\n<li>3 Tab cornmeal (for sprinkling)<\/li>\n<li>1 Tab olive oil<\/li>\n<li>3 large leeks, thinly sliced (about 4 cups)<\/li>\n<li>3 c part-skim ricotta cheese<\/li>\n<li>1 c fresh Parmesan cheese, grated (4 oz)<\/li>\n<li>\u00be c green onions, thinly sliced, including green part<\/li>\n<li>\u00bc tsp salt<\/li>\n<li>\u00bc tsp black pepper<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>2\/3 c chopped walnuts coarsely<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions: <\/b><\/p>\n<p align=\"LEFT\">Preheat oven to 450\u00b0.<\/p>\n<ol>\n<li>Roll each dough to about 12&#8243; diameter.<\/li>\n<li>Place dough on baking sheets coated in cooking spray and cornmeal.<\/li>\n<li>Crimp edges of dough with your fingers to form a rim.<\/li>\n<li>Heat oil in a large nonstick skillet over low-medium heat.<\/li>\n<li>Add leeks and saute 10-15 minutes until soft.<\/li>\n<li>Cool to room temperature.<\/li>\n<li>Combine cheeses, green onions, salt, pepper, and garlic in a bowl.<\/li>\n<li>Spread one half of the cheese mixture evenly over each dough round, leaving a one inch border.<\/li>\n<li>Top each round with one third of the sauteed leeks and sprinkle with walnuts.<\/li>\n<li>Just before coming to the party, bake at 450\u00b0 for 15 minutes, or until cheese is lightly browned and crust is crispy.<\/li>\n<li>Cut each pizza into 8 pieces.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b> 10-12 as appetizer<\/p>\n<p align=\"LEFT\"><b>Source:<\/b> Adapted from Cooking Light, August 2001<\/p>\n","protected":false},"excerpt":{"rendered":"<p>And can&#8217;t you come up with a hundred other good things to put on a cocktail pizza?
