{"id":1696,"date":"2015-02-26T05:24:00","date_gmt":"2015-02-26T12:24:00","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1696"},"modified":"2016-05-20T16:03:07","modified_gmt":"2016-05-20T22:03:07","slug":"individual-beef-wellington","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/individual-beef-wellington.html","title":{"rendered":"Individual Beef Wellington"},"content":{"rendered":"<p style=\"text-align: left;\" align=\"CENTER\"><em>This is one\u00a0<span style=\"text-decoration: underline;\">impressive<\/span> dish! \u00a0Make it when the boss comes to dinner.<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<p align=\"LEFT\">1 egg<br \/>\n1 Tab water<br \/>\n12 beef filet mignon (about \u00bd inch thick \u2013 3 inches in diameter)<br \/>\n\u00bc tsp black pepper<br \/>\n4 Tab butter<br \/>\n8 oz sliced mushrooms (about 3 cups)<br \/>\n1 medium onion, chopped (about \u00bd cup)<br \/>\n4 cloves garlic<br \/>\n\u00be c Gorgonzola cheese, crumbled<br \/>\nflour<br \/>\n1 pkg puff pastry (17.3 oz \/ 2 sheets) Pepperidge Farm Puff Pastry<\/p>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<p align=\"LEFT\"><i>Defrost puff pastry in refrigerator over night.<\/i><\/p>\n<ol>\n<li>Season beef with pepper.<\/li>\n<li>Heat 2 tablespoon butter in large frying pan.<\/li>\n<li>Add beef and cook until browned on both sides but not cooked through. (about 2 minutes per side)<\/li>\n<li>Remove beef and refrigerate until cold, about an hour.<\/li>\n<li>Heat remaining 2 Tab butter and add mushrooms, garlic and onions.<\/li>\n<li>Cook until tender and the liquid is evaporated, stirring occasionally.<\/li>\n<li>Cool mushroom-onion mixture.<\/li>\n<li>Sprinkle work surface with flour.<\/li>\n<li>Unfold pastry on floured surface and roll each sheet into a 12&#215;18 inch rectangle.<\/li>\n<li>Cut each sheet into 6 squares 6\u201dx6\u201d.<\/li>\n<li>Spoon about 1 tablespoon Gorgonzola on each square.<\/li>\n<li>Divide mushroom mixture evenly among the pastry squares.<\/li>\n<li>Top each with a filet mignon.<\/li>\n<li>Brush edges of pastry with the egg mixture.<\/li>\n<li>Fold the opposite corners of the pastries up over the beef and press to seal.<\/li>\n<li>Repeat with remaining corners.<\/li>\n<li>Place the pastry seam down on grease baking sheet.<\/li>\n<li>Refrigerate for 1 hour or overnight.<\/li>\n<li>Brush with egg mixture.<\/li>\n<li>Bake for 20 minutes at 475\u00b0 or until golden brown and beef is 117\u00b0.<\/li>\n<li>Let rest for 10 minutes.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>12<\/p>\n<p align=\"LEFT\"><b>Source: <\/b>Pepperidge Farm Puff Pastry<\/p>\n<p align=\"LEFT\"><b>Comments: <\/b>Keep beef packets refrigerated until ready to cook.<\/p>\n<p align=\"LEFT\">.<\/p>\n<p align=\"LEFT\"><a name=\"FVB1SGxzixqGcM%252525253A\"><\/a><\/p>\n<p align=\"CENTER\"><b>Gorgonzola Sauce<\/b><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<p align=\"LEFT\">4 c heavy cream<br \/>\n3- 4 oz crumbly Gorgonzola(not creamy or \u201cdolce\u201d)<br \/>\n3 tab freshly grated Parmesan cheese<br \/>\n3\/4 tsp kosher salt<br \/>\n3\/4 tsp freshly ground black pepper<br \/>\n3 tab minced fresh parsley<\/p>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Bring the cream to a full boil in a large saucepan over medium-high heat. Watch, it will boil over!<\/li>\n<li>Lower heat to an active simmer (just low enough it does not boil over) for 15 to 20 minutes, until it\u2019s thickened, like a white sauce, stirring frequently.<\/li>\n<li>Remove from the heat.<\/li>\n<li>Add the Gorgonzola, Parmesan, salt, pepper, and parsley.<\/li>\n<li>Whisk rapidly until the cheeses melt.<\/li>\n<li>To reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b> Makes 3 cups<\/p>\n<p align=\"LEFT\"><b>Source:<\/b> Barefoot Contessa Parties! by Ina Garten<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>This is one\u00a0impressive dish! \u00a0Make it when the boss comes to dinner.
