{"id":1723,"date":"2015-03-02T14:13:18","date_gmt":"2015-03-02T21:13:18","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1723"},"modified":"2016-03-08T13:46:19","modified_gmt":"2016-03-08T20:46:19","slug":"pigs-in-a-sleeping-bag","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/pigs-in-a-sleeping-bag.html","title":{"rendered":"Pigs in a Sleeping Bag"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>This is a real upgrade from hot dogs in crescent rolls!! \u00a0And they freeze.<\/em><\/p>\n<p align=\"CENTER\">\n<p align=\"LEFT\"><b>Ingredients: <\/b><\/p>\n<ul>\n<li>1 Tab butter<\/li>\n<li>\u00bc c minced shallot<\/li>\n<li>2 large garlic cloves, minced<\/li>\n<li>3 Tab panko (Japanese breadcrumbs)<\/li>\n<li>3 Tab milk<\/li>\n<li>\u00be c sauerkraut, drained<\/li>\n<li>1 Tab Dijon mustard<\/li>\n<li>\u00be tsp caraway seeds, toasted, lightly crushed<\/li>\n<li>Kosher salt and freshly ground black pepper<\/li>\n<li>8 oz ground pork<\/li>\n<li>1 package frozen puff pastry, thawed<\/li>\n<li>flour (for dusting)<\/li>\n<li>1 egg, beaten to blend<\/li>\n<li>Mustard Dip<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Melt butter in a small skillet over medium heat.<\/li>\n<li>Add shallot and cook, stirring occasionally,reducing heat if needed to prevent burning, until soft, 4-5 minutes.<\/li>\n<li>Add garlic and cook, stirring occasionally, until aromatic, about 1 minute.<\/li>\n<li>Transfer shallot mixture to a large bowl and let cool.<\/li>\n<li>Combine panko and milk in a small bowl Let stand until milk is absorbed, 2-3 minutes.<\/li>\n<li>Add to bowl with shallot mixture.<\/li>\n<li>Squeeze any excess liquid from sauerkraut; coarsely chop and add to bowl.<\/li>\n<li>Stir in Dijon mustard and caraway seeds; season with salt and pepper.<\/li>\n<li>Mix well.<\/li>\n<li>Add pork; using a fork or your hands, gently mix until just combined (do not overmix).<\/li>\n<li>Chill in refrigerator overnight.<\/li>\n<li>Line a baking sheet with parchment paper.<\/li>\n<li>Roll out pastry on a lightly floured surface to a 14&#8243; x10&#8243; rectangle.<\/li>\n<li>Cut lengthwise into three 14&#8243; x3 1\/3&#8243; strips.<\/li>\n<li>Transfer strips to prepared baking sheet.<\/li>\n<li>Using one-sixth of sausage filling and leaving a 1&#8243; border at each end, pat sausage to form a thin log of filling down the center of 1 pastry strip.<\/li>\n<li>Fold pastry over sausage mixture to enclose, then press pastry together to seal. Fold seam under to ensure that sausage is tightly wrapped.<\/li>\n<li>Repeat with remaining pastry and sausage mixture.<\/li>\n<li>Cut small diagonal slits at 1&#8243; intervals along top of pastries (to release steam).<\/li>\n<li>Brush top and sides of pastry with beaten egg.<\/li>\n<li>Chill in freezer for about 30 minutes or up to 2 weeks ahead.
