{"id":1743,"date":"2015-03-13T06:48:34","date_gmt":"2015-03-13T12:48:34","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1743"},"modified":"2016-03-10T14:55:43","modified_gmt":"2016-03-10T21:55:43","slug":"roasted-garlic-mashed-potatoes","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/roasted-garlic-mashed-potatoes.html","title":{"rendered":"Roasted Garlic Mashed Potatoes"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>Margie makes the world&#8217;s greatest garlic mashed potatoes. \u00a0Just ask her husband and daughter. \u00a0And they reheat.<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>3 lbs Yukon Gold potatoes, unpeeled, cubed<\/li>\n<li>2 cloves raw garlic<\/li>\n<li>12 cloves roasted garlic (see below)<\/li>\n<li>1\/2 sour cream<\/li>\n<li>\u00bd c butter, softened (one stick)<\/li>\n<li>milk or cream, if needed<\/li>\n<li>salt and white pepper<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Boil unpeeled potatoes and raw garlic in salted water until tender.<\/li>\n<li>Drain.<\/li>\n<li>Smash roasted garlic with the side of a large knife.<\/li>\n<li>Return potatoes to potato pan and heat until dry and a film forms on the bottom of the pan.<\/li>\n<li>Mash <span style=\"text-decoration: underline\"><strong>by hand<\/strong><\/span> with roasted garlic, sour cream, butter, and salt and white pepper.<\/li>\n<li>Add cream or milk to adjust consistency.<\/li>\n<li>Place in casserole and reheat (microwave or oven)\u00a0when ready to serve.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b> 10 &#8211; 12<\/p>\n<p align=\"LEFT\"><b>Source:<\/b> The daughter, Margie<\/p>\n<p align=\"CENTER\"><b>Roasted Garlic: How to Batch Roast and Freeze Garlic<\/b><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>Garlic cloves, peeled (You know, the big bag\/jar from Costco)<\/li>\n<li>Olive oil<\/li>\n<li>Salt &amp; Pepper<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>In a large bowl, toss garlic with a generous amount of olive oil &#8211; enough to coat each clove.<\/li>\n<li>Spread garlic cloves onto a foil lined baking sheet in a single layer.<\/li>\n<li>Sprinkle with salt and pepper.<\/li>\n<li>Cover the baking sheet with foil, making sure you have a good seal over top and around the edges.<\/li>\n<li>Bake at 375 degrees for one hour.<\/li>\n<li>Remove from oven cool (without removing foil) for about 15 minutes.<\/li>\n<li>Remove foil and allow to cool to room temperature.<\/li>\n<li>Place in a freezer bag and freezing flat.
