{"id":1749,"date":"2015-03-13T06:49:52","date_gmt":"2015-03-13T12:49:52","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1749"},"modified":"2015-03-13T06:49:52","modified_gmt":"2015-03-13T12:49:52","slug":"pecan-tassies","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/pecan-tassies.html","title":{"rendered":"Pecan Tassies"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>These cookies are a little labor intensive but are really good &#8211; sort of mini pecan pies.<\/em><\/p>\n<p align=\"LEFT\"><b>Dough Ingredients:<\/b><\/p>\n<ul>\n<li>\u00bd c unsalted butter<\/li>\n<li>3 oz cream cheese<\/li>\n<li>1 c flour<\/li>\n<li>baking spray<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Filling Ingredients<\/b>:<\/p>\n<ul>\n<li>\u00be c light brown sugar, firmly packed<\/li>\n<li>\u00be c pecans, toasted and chopped<\/li>\n<li>1 egg<\/li>\n<li>2 Tab unsalted butter, room temperature<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>2 Tab bourbon (sour mash if possible)<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Dough Directions:<\/b><\/p>\n<ol>\n<li>Preheat the oven to 350 \u00b0.<\/li>\n<li>Spray 36 mini muffin pans.<\/li>\n<li>Cream the butter and cream cheese with an electric mixer.<\/li>\n<li>Add flour and beat just until dough comes together; do not overmix.<\/li>\n<li>Divide the dough into 36 pieces and roll into balls.<\/li>\n<li>Place on a plate or in a zip-top bag and refrigerate for about 2 hours.<\/li>\n<li>Either press the dough balls into the muffin cups and up the sides, or flatten the balls slightly with your palm and use a rolling pin to roll into a disk about 2 inches in diameter (a little larger than the size of the muffin cup opening) and place into the muffin cups.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Filling Directions<\/b>:<\/p>\n<ol>\n<li>Mix together the brown sugar, egg, butter, bourbon and vanilla extract with a spoon.<\/li>\n<li>Divide pecans among the mini muffin cups.<\/li>\n<li>Evenly divide the filling between the mini muffin cups.<\/li>\n<li>Bake for 20 to 25 minutes or until the tops are set and cracked slightly.<\/li>\n<li>Cool in the muffin cups on a cooling rack.<\/li>\n<li>The tassies can be stored in an airtight container at room temperature.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b> 36 Tassies<\/p>\n<p align=\"LEFT\"><b>Source: <\/b>Brown Eyed Baker (Recipe adapted from an old firehall ladies auxiliary cookbook)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These cookies are a little labor intensive but are really good &#8211; sort of mini pecan pies.
