{"id":1762,"date":"2015-02-20T11:42:32","date_gmt":"2015-02-20T18:42:32","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1762"},"modified":"2015-02-20T11:42:32","modified_gmt":"2015-02-20T18:42:32","slug":"chocolate-chess-pie","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chocolate-chess-pie.html","title":{"rendered":"Chocolate Chess Pie"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>No one seems to know why it is called &#8220;Chess Pie&#8221; \u00a0but chocolate and cherries -mmmmm good!<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients: <\/b><\/p>\n<ul>\n<li>2 unbaked 9-inch pie crusts in glass pie pans<\/li>\n<li>1 c butter<\/li>\n<li>6 ounces dark chocolate<\/li>\n<li>3 c sugar<\/li>\n<li>2 Tab flour<\/li>\n<li>6 eggs<\/li>\n<li>2 tsp vanilla<\/li>\n<li>12 ounce can evaporated milk<\/li>\n<li>whipped cream<\/li>\n<li>Dark Cherry Sauce<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Preheat oven to 400\u00b0<\/li>\n<li>Prick holes in pie crust to prevent bubbling.<\/li>\n<li>Bake pie crusts for 8 minutes.<\/li>\n<li>Remove from oven to rack.<\/li>\n<li>Decrease oven temperature to 375 \u00b0.<\/li>\n<li>In large saucepan on low melt butter and chocolate, stirring occasionally.<\/li>\n<li>In medium bowl, combine sugar and flour with wire whisk.<\/li>\n<li>In another bowl, whisk together eggs, vanilla and evaporated milk.<\/li>\n<li>Add a couple of tablespoonfuls of the melted chocolate mixture to the egg mixture and stir.<\/li>\n<li>Add both sugar and egg mixtures to pan of melted chocolate.<\/li>\n<li>Stir to combine.<\/li>\n<li>Increase heat to medium and stir constantly for 10 minutes. (really, stir constantly or you will have chocolate scrambled eggs.)<\/li>\n<li>Evenly divide filling between the 2 pie pans.<\/li>\n<li>Bake for 30 minutes. It will be soft.<\/li>\n<li>Serve with Dark Cherry Sauce and whipped cream.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b> Makes 2 Pies<\/p>\n<p align=\"LEFT\"><b>Source:<\/b> Carroll Pellegrinelli &#8211; about.com<\/p>\n<p align=\"CENTER\"><b>Dark Cherry Sauce<\/b><\/p>\n<p>&nbsp;<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>\u00bd c sugar<\/li>\n<li>2 tsp almond extract<\/li>\n<li>2 pound frozen pitted sweet cherries, defrosted, 6 cups<\/li>\n<li>\u00bc c water<\/li>\n<li>\u00bd tsp almond extract<\/li>\n<\/ul>\n<p><b>Directions:<\/b><\/p>\n<ol>\n<li>Combine the cherries and their liquid with sugar, and \u00bd cup water in a large pan.<\/li>\n<li>Bring to a simmer over moderate heat and cook about 3 minutes.<\/li>\n<li>Remove the cherries to a bowl with a slotted spoon.<\/li>\n<li>Raise the heat to medium-high and boil until the liquid is reduced to approximately \u00bd cup, about 5 minutes more. Watch \u2013 it will boil over!<\/li>\n<li>Pour sauce over the cherries.<\/li>\n<li>Add almond extract.<\/li>\n<li>Let cool to room temperature or chill.<\/li>\n<li><\/li>\n<\/ol>\n<p><b>Serves: <\/b>Makes approximately 5 cups<\/p>\n<p><b>Source:<\/b> Laura b.
