{"id":1803,"date":"2015-03-16T05:40:09","date_gmt":"2015-03-16T11:40:09","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1803"},"modified":"2015-03-16T05:45:08","modified_gmt":"2015-03-16T11:45:08","slug":"oven-roasted-tri-tip","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/oven-roasted-tri-tip.html","title":{"rendered":"Oven Roasted Tri-Tip"},"content":{"rendered":"<p><em>Yes, you really can do tri-tip in the oven &#8211; and it tastes pretty darn good!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 \u2013 4 \u00bd lbs tri-tip<\/li>\n<li>Santa Maria Rub<\/li>\n<li>1 c beef stock<\/li>\n<li>\u00bd c red wine<\/li>\n<li>2 tsp minced garlic<\/li>\n<li>1 Tab Dijon mustard<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<\/ul>\n<p><strong> Directions:<\/strong><\/p>\n<ol>\n<li>Prepare the Santa Maria Rub.<\/li>\n<li>Use a damp towel to lightly moisten the roast with water, then pat with the\u00a0prepared rub on both sides.<\/li>\n<li>Place in ziploc bag.<\/li>\n<li>Refrigerate overnight, for the flavors to fully come together.<\/li>\n<li>Pre-heat the oven to 450\u00b0.<\/li>\n<li>Place tri-tip in a roasting pan with a rack, fat side up, and place in hot oven.<\/li>\n<li>Roast for 30 minutes.<\/li>\n<li>Flip the roast over and roast for an additional 15 \u2013 30 minutes until it reaches 130\u00b0.<\/li>\n<li>Remove roast from oven and place on carving board.Tent with foil and allow the meat to stand for 15 minutes before carving.<\/li>\n<li>Carve by slicing the meat into thin slices across the grain.<\/li>\n<li>Place the pan you roasted the meat in over a stove burner, add the garlic, stir for 1 minute.<\/li>\n<li>Add beef stock and wine.<\/li>\n<li>Bring to a boil, scraping up any browned bits from the bottom of the pan.<\/li>\n<li>Reduce the sauce slightly, then whisk in the mustard and taste it for salt and pepper.<\/li>\n<li>Place a tbs of sauce over meat on each plate and serve the rest in a bowl.<\/li>\n<\/ol>\n<p>NOTE: This is a lean cut of meat which means that sometimes there are no pan drippings,\u00a0<span style=\"line-height: 1.5\">so put a pat of butter in the pan, add the wine and the rest of the ingredients.<\/span><\/p>\n<p><strong>Serves:<\/strong> 10<\/p>\n<p><strong>Source: \u00a0<\/strong>GOK<\/p>\n<p style=\"text-align: center\"><strong>Santa Maria Rub\u00a0<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 tsp salt<\/li>\n<li>1 Tab garlic salt<\/li>\n<li>1 tsp celery salt<\/li>\n<li>\u00bd tsp ground black pepper<\/li>\n<li>\u00bd tsp onion powder<\/li>\n<li>\u00bd tsp paprika<\/li>\n<li>\u00bd tsp dried dill<\/li>\n<li>\u00bd tsp dried sage<\/li>\n<li>\u00bd tsp crushed dried rosemary<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Mix together the salt, garlic salt, celery salt, black pepper, onion powder,\u00a0paprika, dill, sage, and rosemary in a bowl.<\/p>\n<p><strong>Serves: \u00a0<\/strong>Makes about 1\/4 cup.<\/p>\n<p><strong>Source:<\/strong> Just a Pinch Recipes, Real Recipes From Real Home Cooks &#8211; added by Bonnie D<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yes, you really can do tri-tip in the oven &#8211; and it tastes pretty darn good!
