{"id":1835,"date":"2015-03-17T06:26:36","date_gmt":"2015-03-17T12:26:36","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=1835"},"modified":"2015-03-17T06:26:36","modified_gmt":"2015-03-17T12:26:36","slug":"cherry-lime-cobbler-with-vanilla-creme-fraiche-biscuits","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/cherry-lime-cobbler-with-vanilla-creme-fraiche-biscuits.html","title":{"rendered":"Cherry-Lime Cobbler with Vanilla Cr\u00e9me Fra\u00eeche Biscuits"},"content":{"rendered":"<p><em>Real creme fraiche is delicious. \u00a0but, in a pinch you can substitute sour cream or yogurt.<\/em><\/p>\n<p><strong>Ingredients for Filling:<\/strong><\/p>\n<ul>\n<li>\u00bd c golden brown sugar (packed)<\/li>\n<li>4 tsp cornstarch<\/li>\n<li>Pinch of salt<\/li>\n<li>\u00bd c water<\/li>\n<li>40 oz frozen tart cherries<\/li>\n<li>1 Tab fresh lime juice<\/li>\n<li>1 tsp finely grated lime peel<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Directions for Filling:<\/strong><\/p>\n<ol>\n<li>Stir brown sugar, cornstarch, and salt in large sauce pan.<\/li>\n<li>Stir in 1\/2 cup water.<\/li>\n<li>Stir over medium heat until sugar and cornstarch dissolve.<\/li>\n<li>Add cherries; bring to boil, scraping sides of skillet and stirring frequently.<\/li>\n<li>Reduce heat to medium-low; simmer until mixture thickens, about 2 &#8211; 4 minutes.<\/li>\n<li>Remove from heat.<\/li>\n<li>Stir in lime juice and lime peel.<\/li>\n<li>Transfer filling to 9 x 13 x 2-inch glass baking dish.<\/li>\n<\/ol>\n<p><strong>Ingredients for Biscuits:<\/strong><\/p>\n<ul>\n<li>1 \u00be c flour<\/li>\n<li>\u00be c sugar<\/li>\n<li>1 Tab baking powder<\/li>\n<li>\u00bc tsp salt<\/li>\n<li>2 c cr\u00e8me fra\u00eeche or sour cream (divided use)<\/li>\n<li>2 tsp vanilla extract<\/li>\n<li>\u00bc tsp finely grated lime peel<\/li>\n<li>1 Tab milk (about)<\/li>\n<li>1 Tab suga<\/li>\n<\/ul>\n<p><strong> Directions for Biscuits:<\/strong><\/p>\n<ol>\n<li>Whisk flour, \u00be cup sugar, baking powder, and salt in medium bowl.<\/li>\n<li>Whisk 1 cup cr\u00e8me fra\u00eeche, vanilla, and lime peel in small bowl.<\/li>\n<li>Add cr\u00e8me fra\u00eeche mixture to dry ingredients.<\/li>\n<li>Stir with fork just until dough begins to come together.<\/li>\n<li>Turn dough out onto well floured surface and knead just until dough holds together.<\/li>\n<li>Gather dough into round; pat out to 1\/2-inch thickness.<\/li>\n<li>Using 2-inch biscuit cutter or cookie cutter dipped in flour, cut out rounds.<\/li>\n<li>Gather dough scraps together; pat out to 1\/2-inch thickness and cut out more dough\u00a0rounds for a total of 10.<\/li>\n<li>Transfer rounds to another rimmed baking sheet;<\/li>\n<li>Brush tops lightly with milk, then sprinkle with remaining 1 tablespoon sugar.<\/li>\n<\/ol>\n<p><strong style=\"line-height: 1.5\">Directions for Baking:<\/strong><\/p>\n<ol>\n<li>Position 1 rack in top third and 1 rack in bottom third of oven.<\/li>\n<li>Preheat to 450\u00b0F.<\/li>\n<li>Place cherries in bottom third of oven and biscuits in top third of oven.<\/li>\n<li>Bake until cherries are bubbling and biscuits are golden, about 10 minutes.<\/li>\n<li>Warm cherries in 300\u00b0 oven for 15 minutes.<\/li>\n<li>Divide warm cherries among 10 bowls; top each with 1 biscuit and spoonful ofremaining cr\u00e8me fra\u00eeche<\/li>\n<\/ol>\n<p><strong> Serves<\/strong>: Makes 10 servings<\/p>\n<p><strong> Source:<\/strong> Bon App\u00e9tit | June 2008 by Lori Longbotham<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Real creme fraiche is delicious. \u00a0but, in a pinch you can substitute sour cream or yogurt.
