{"id":19,"date":"2003-11-28T14:33:14","date_gmt":"2003-11-28T21:33:14","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/turkey-dressing-single-turkey-size.html"},"modified":"2025-11-21T15:18:53","modified_gmt":"2025-11-21T22:18:53","slug":"turkey-dressing-single-turkey-size","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/turkey-dressing-single-turkey-size.html","title":{"rendered":"Turkey Dressing &#8211; Single Turkey Size"},"content":{"rendered":"<p><i>This is a scaled down version of my family recipe.\u00a0 Measurements may drift if necessary.<\/i><\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>2 1\/8 lbs Dry Bread (20 cups) &#8212; cubed\u00a0 (4# fresh=3# dried)<\/li>\n<li>2 \u00bc Onions &#8212; diced<\/li>\n<li>1 bunch Celery &#8212; diced<\/li>\n<li>1 stick butter\/margarine<\/li>\n<li>2 Eggs<\/li>\n<li>1 1\/3 cups Milk<\/li>\n<li>2 teaspoons Garlic Salt<\/li>\n<li>2 tablespoons Poultry Seasoning<\/li>\n<li>\u00bd tablespoon Caraway Seeds<\/li>\n<li>salt and pepper<\/li>\n<li>bacon fat<\/li>\n<li>turkey parts<\/li>\n<li>1 \u00bd cups Broth, (approximately) &#8212; recipe\u00a0below<\/li>\n<\/ul>\n<p><b>Broth Directions<\/b>:<\/p>\n<ol>\n<li>Remove the stuff inside the turkey &#8211; neck, heart, liver, etc.<\/li>\n<li>Remove the wings.<\/li>\n<li>Place 1 onion, celery tops, 1 tsp garlic salt, gizzards, hearts, etc, necks, 2nd and 3rd wing joints in a large pot.<\/li>\n<li>Fill the pan \u00a0with 8 cups water.<\/li>\n<li>Simmer for several hours.<\/li>\n<li>Strain broth.<\/li>\n<li>Reserve liver, heart etc for giblet gravy if you must.<\/li>\n<\/ol>\n<p><strong>Dressing Directions:<\/strong><\/p>\n<ol>\n<li>Dice the celery and \u00a0onions.<\/li>\n<li>Saute until soft in margarine and bacon grease.<\/li>\n<li>Mix milk and beaten eggs.<\/li>\n<li>In a large, really large, bowl (or the kitchen sink) mix \u00a0dried bread, garlic salt, poultry seasoning, caraway seeds, salt and pepper.<\/li>\n<li>With a large spoon (or your hands) add the milk\/egg mixture.<\/li>\n<li>Add enough broth to make a moist mess. \u00a0Dressing should be slightly moist on the outside of cube but crispy on the inside.<\/li>\n<li>Reserve remaining broth, wings,\u00a0 inners for gravy and cooking extra dressing.<\/li>\n<li>Rinse the inside of the turkeys thoroughly.<\/li>\n<li>Rub the inside and outside with butter\/bacon grease.<\/li>\n<li>Grease a 6 cup casserole with bacon grease.<\/li>\n<li>Stuff the birds with dressing, taking care not to over stuff.<\/li>\n<li>Place remaining dressing in casserole.<\/li>\n<li>Place wings on top of casserole.<\/li>\n<li>Grease roasting pans with bacon grease.<\/li>\n<li>Place turkeys in pans.<\/li>\n<li>Cover with old (clean) t-shirt soaked in bacon grease.<\/li>\n<li>Cook 3 1\/2 -4 hours. 165\u00b0<\/li>\n<li>Let rest 30 minutes before carving.<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>20 people more or less.<\/p>\n<p><strong>Source: \u00a0<\/strong>Many years of experience.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a scaled down version of my family recipe.\u00a0 Measurements may drift if necessary.
