{"id":191,"date":"2011-04-03T15:07:57","date_gmt":"2011-04-03T22:07:57","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=191"},"modified":"2016-01-25T15:11:28","modified_gmt":"2016-01-25T22:11:28","slug":"tequila-shrimp","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/tequila-shrimp.html","title":{"rendered":"Tequila Shrimp"},"content":{"rendered":"<p><em><strong>Note<\/strong>: Not for the faint of heart &#8211; flames about 2 feet high!!!\u00a0 But really yummy!<\/em><\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<ul>\n<li>1\u00bd pounds large shrimp, peeled and deveined<\/li>\n<li>1 t kosher salt<\/li>\n<li>2 T butter<\/li>\n<li>\u00bd c white or reposado tequila<\/li>\n<li>\u00be c crema or sour cream<\/li>\n<li>1 scallion, thinly sliced<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong>:<\/p>\n<ol>\n<li>Toss shrimp with salt and \u00be t coarsely ground pepper<\/li>\n<li>Heat butter in 12 inch heavy skillet over medium-high heat until foam subsides.<\/li>\n<li>Saute shrimp, turning, until pink and just cooked through, 3 &#8211; 5 minutes.<\/li>\n<li>Reduce heat and add tequila.<\/li>\n<li>Increase heat to medium high.<\/li>\n<li>Tilt skillet over gas burner to ignite tequila (or ignite with a long match).\u00a0USE CAUTION &#8211; FLAMES MAY SHOOT UP HIGH!<\/li>\n<li>Cook, shaking gently once or twice, until flames subside.<\/li>\n<li>Remove from heat and stir in crema.<\/li>\n<li>Serve sprinkled with scallion.<\/li>\n<\/ol>\n<p><strong>Serves<\/strong>: 4<\/p>\n<p><strong>Source<\/strong>:\u00a0 Epicurious via Quick Kitchen (Melissa Rruggiero)<\/p>\n<p>Could be done with scallops too.<br \/>\nAccompaniment: rice if using it for an entree.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Note: Not for the faint of heart &#8211; flames about 2 feet high!!!\u00a0 But really yummy!
