{"id":229,"date":"2011-04-14T16:39:39","date_gmt":"2011-04-14T22:39:39","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=229"},"modified":"2016-03-15T11:48:21","modified_gmt":"2016-03-15T17:48:21","slug":"mashed-potato-casserole-with-smoked-gouda-and-bacon","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/mashed-potato-casserole-with-smoked-gouda-and-bacon.html","title":{"rendered":"Mashed Potato Casserole with Smoked Gouda and Bacon"},"content":{"rendered":"<p><em>Really good with pork roast or chicken, or anything that is not going to make gravy.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 slices thick cut smoked bacon<\/li>\n<li>3 large green onions, white and green parts, finely chopped<\/li>\n<li>3 lbs russet potatoes, peeled, cut into 1\u00bd inch cubes<\/li>\n<li>\u00be c sour cream<\/li>\n<li>1\/3 c whole milk<\/li>\n<li>\u00bc c (\u00bd stick) butter<\/li>\n<li>2 c (about 8 oz) coarsely grated smoked Gouda, divided<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 375\u00b0<\/li>\n<li>Butter 9 x 13 baking dish.<\/li>\n<li>Cook bacon until golden brown and crisp.<\/li>\n<li>Transfer to paper towel to drain.<\/li>\n<li>Chop bacon, place in bowl with onions.<\/li>\n<li>Place potatoes in large pot, add enough cold water to cover, sprinkle with salt, cover (slightly ajar), boil until tender &#8212; about 15 &#8211; 20 minutes.<\/li>\n<li>Drain well, return to pot and cook over low heat, stirring often, until potatoes are dry and light film forms on the bottom of pot &#8212; about 2 minutes.<\/li>\n<li>Add sour cream, milk, butter.<\/li>\n<li>Using masher, mash until almost smooth.<\/li>\n<li>Stir in 1\u00bd c Gouda and 1 c bacon mixture.<\/li>\n<li>Season with salt\/pepper.<\/li>\n<li>Spread mixture in baking dish.<\/li>\n<li>Sprinkle remaining Gouda over.<\/li>\n<li>Bake until cheese melts and edges are bubbling &#8211; about 40 minutes.<\/li>\n<li>Sprinkle with reserved bacon mixture.<\/li>\n<\/ol>\n<p><strong>Serves: <\/strong>6-8<\/p>\n<p><strong>Notes: <\/strong>I used red potatoes and did not peel them.<\/p>\n<ul><\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Really good with pork roast or chicken, or anything that is not going to make gravy.
