{"id":237,"date":"2011-04-17T15:30:13","date_gmt":"2011-04-17T21:30:13","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=237"},"modified":"2016-03-02T06:50:28","modified_gmt":"2016-03-02T13:50:28","slug":"aunt-emmas-cheese-souffle","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/aunt-emmas-cheese-souffle.html","title":{"rendered":"Aunt Emma\u2019s Cheese Souffle"},"content":{"rendered":"<p><em>A really old &#8220;lady luncheon&#8221; dish &#8211; but still good for a brunch.\u00a0 You make it the day before.<br \/>\n<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\u00bd loaves unsliced white bread (see notes)<\/li>\n<li>\u00be lbs butter<\/li>\n<li>\u00be lbs American cheese<\/li>\n<li>6 eggs<\/li>\n<li>4\u00bd c milk<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Cut crust from bread.<\/li>\n<li>Cut bread into three layers.<\/li>\n<li>Melt butter and cheese together.<\/li>\n<li>Beat eggs.<\/li>\n<li>Add milk.<\/li>\n<li>Place first layer in 9&#215;13 pan.<\/li>\n<li>Pour 1\/3 milk on first layer.<\/li>\n<li>Spread 1\/4 cheese on second layer.<\/li>\n<li>Place on first layer, cheese side down.<\/li>\n<li>Add 1\/3 milk.<\/li>\n<li>Spread top layer with \u00bc cheese.<\/li>\n<li>Place on second layer, cheese side down .<\/li>\n<li>Add rest of milk.<\/li>\n<li>Spread top and sides with rest of cheese.<\/li>\n<li>Refrigerate over night.<\/li>\n<li>Preheat oven to 350\u00b0<\/li>\n<li>Set dish in pan of water and bake about 1 hr until golden brown.<\/li>\n<li>Slice to serve.<\/li>\n<\/ol>\n<p><strong>Serves: <\/strong>8<\/p>\n<p><strong>Source: <\/strong>Emma Kleerup, <em>Kenilworth Church Circle Cookbook<\/em><\/p>\n<p><strong>Notes:<\/strong> Okay, unsliced bread is a challenge to find these days.\u00a0 you can use sandwich bread (or even better, sourdough bread) and just fill the 9&#215;13 pan, spread with cheese, more bread, more cheese, more bread, more cheese.\u00a0 Pour milk over all of it and refrigerate.<\/p>\n<p>Aunt Emma served this with a mushroom sauce.\u00a0 It is really good with salsa and sour cream too.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A really old &#8220;lady luncheon&#8221; dish &#8211; but still good for a brunch.\u00a0 You make it the day before.
