I cooked the rice separate from the jambalaya in order to use instant rice (for ease of cooking on a camp-out). I also added diced tomatoes because that is the way I like it.\u00a0This version is lightly spiced, in response to those a little more sensitive to pepper.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 teaspoons olive oil<\/li>\n<li>2 boneless skinless chicken breasts, cut\u00a0into bite-size pieces<\/li>\n<li>8 ounces smoked sausage, diced<\/li>\n<li>1 onion, diced<\/li>\n<li>1 green bell pepper, diced<\/li>\n<li>1\/2 cup diced celery<\/li>\n<li>2 tablespoons chopped garlic<\/li>\n<li>1\/4 teaspoon cayenne pepper<\/li>\n<li>1\/2 teaspoon onion powder1 14.5 oz can diced tomatoes<\/li>\n<li>salt and ground black pepper to taste<\/li>\n<li>3 bay leave<\/li>\n<li>2 teaspoons Worcestershire sauce<\/li>\n<li>1 teaspoon hot pepper sauce<\/li>\n<li>2 cups chicken stock<\/li>\n<li>4 cups instant\u00a0white rice<\/li>\n<li>4 cups chicken stock<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>\u00a0Heat oil in a large pot over medium high heat.<\/li>\n<li>Saute chicken and sausage until lightly browned, about 5 minutes.<\/li>\n<li>Stir in onion, bell pepper, celery and garlic.<\/li>\n<li>Season with cayenne, onion powder, salt and pepper.<\/li>\n<li>Cook 5 minutes, or until onion is tender and translucent.<\/li>\n<li>Add chicken stock and bay leaves.<\/li>\n<li>Bring to a boil, then reduce heat, cover, and simmer 20 minutes.<\/li>\n<li>Stir in the Worcestershire sauce and hot pepper sauce.<\/li>\n<li>Prepare rice according to directions.<\/li>\n<li>Serve over rice.<\/li>\n<\/ol>\n<p>Serves: 6<\/p>\n<p>Notes: \u00a0You can use 2 pounds of chicken tenders instead of the chicken breasts.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe is loosely based on one from allrecipes.com.
