{"id":2499,"date":"2015-08-29T14:45:18","date_gmt":"2015-08-29T20:45:18","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=2499"},"modified":"2023-07-14T11:40:17","modified_gmt":"2023-07-14T17:40:17","slug":"chicken-salad-oriental","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chicken-salad-oriental.html","title":{"rendered":"Chicken Salad Oriental"},"content":{"rendered":"<p><em>A variations of this salad is at every restaurant, but this is the original.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 chicken breast (or 3# turkey<\/li>\n<li>2 small slices fresh ginger (or 1\/4 tsp dried ginger)<\/li>\n<li>1 head lettuce, chopped<\/li>\n<li>3 green onions, slivered into 1 inch pieces<\/li>\n<li>1\/2 lb bean sprouts<\/li>\n<li>1\/2 lb mushrooms sliced<\/li>\n<li>6-8 water chestnuts, sliced ( 1\/2 can)<\/li>\n<li>1\/2 c slivered almonds &#8211; toasted<\/li>\n<li>1\/4 c sesame seeds, toasted<\/li>\n<li>1 pkg Mai-fun noodles (Rice threads)<\/li>\n<li>oil<\/li>\n<\/ul>\n<p><strong>Dressing:<\/strong><\/p>\n<ul>\n<li>1\/2 tsp dry mustard<\/li>\n<li>1 Tab sugar<\/li>\n<li>1 Tab \u00a0soy sauce<\/li>\n<li>1 Tab sesame oil<\/li>\n<li>1\/4 c oil<\/li>\n<li>3 Tab Marukan rice vinegar<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Cook chicken in small about of water with ginger.<\/li>\n<li>Cut into bite size pieces.<\/li>\n<li>Fry Mai-fun noodles, a few at a time,in about 2 inches of hot oil (400\u00b0) in a deep pot. Watch out &#8211; they explode!<\/li>\n<li>Mix dressing ingredients in a jar.<\/li>\n<li>Shake vigorously.<\/li>\n<li>Toss everything together at the last minute.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> 4 &#8211; 6<\/p>\n<p><strong>Source:<\/strong> \u00a0Mai-fun noodle package<\/p>\n<p><strong>Notes:<\/strong> \u00a0Noodles can be done ahead and stored in an airtight container.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A variations of this salad is at every restaurant, but this is the original.
