Keep them and make this soup &#8211; so good in the middle of winter when fresh tomatoes taste like cardboard.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>7 &#8211; 8 lbs tomatoes, ripe (16 &#8211; 18 large)<\/li>\n<li>3 onions, large, chopped (2 lbs)<\/li>\n<li>1\/4 c sugar<\/li>\n<li>1\/4 c parsley, chopped<\/li>\n<li>6 Tab cornstarch<\/li>\n<li>6 Tab water<\/li>\n<li>dash of ground cloves (optional)<\/li>\n<li>butter or sour cream<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Core then chop 3 quarts of tomatoes. \u00a0Don&#8217;t bother to peel.<\/li>\n<li>In an 8 qt pan combine tomatoes, onions , sugar and parsley.<\/li>\n<li>Cook over medium heat, stirring, until the tomatoes make juice and come to a boil.<\/li>\n<li>Reduce to medium low.<\/li>\n<li>\u00a0Cover and cook for 45 minutes, stirring occasionally.<\/li>\n<li>Blend cornstarch with water, stir into the tomato mixture.<\/li>\n<li>Cook, stirring until boiling and thickened.<\/li>\n<li>Remove and press through a food mill or fine strainer.<\/li>\n<li>Discard seeds and pulp.<\/li>\n<li>Cool and pack in pint containers.<\/li>\n<li>Freeze.<\/li>\n<li>To serve, thaw and heat. \u00a0Add salt, pepper, cloves.<\/li>\n<li>Top each serving with butter or sour cream (or popcorn).<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>12 (makes 6 quarts)<\/p>\n<p><strong>Source: \u00a0<\/strong>Sunset<\/p>\n<p><strong>Notes:\u00a0<\/strong>For cream of tomato soup add 1 c milk or half and half and 1\/2 tsp basil.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So, it is the middle of summer and you have run out of friends to give your\u00a0beautiful tomatoes. \u00a0Be selfish!
