{"id":2766,"date":"2016-02-11T14:04:18","date_gmt":"2016-02-11T21:04:18","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=2766"},"modified":"2022-08-07T16:47:44","modified_gmt":"2022-08-07T22:47:44","slug":"cheese-cake","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/cheese-cake.html","title":{"rendered":"Cheese Cake &#8211; Cheese Torte (with Zwieback)"},"content":{"rendered":"<p><em>Not your traditional cheese cake &#8211; no cream cheese.\u00a0 This is one of Jim&#8217;s favorite cakes &#8211; usually his birthday cake.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 pkg Zwieback (6 oz)<\/li>\n<li>2 c sugar (divided)<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1\/2 c butter, melted<\/li>\n<li>speck of salt<\/li>\n<li>1\/2 lemon, juice and grated rind<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1\/2 pt cream (1 c) or canned milk<\/li>\n<li>1 1\/2 lb cottage cheese (24 oz)<\/li>\n<li>1\/4 c flour (4 Tab)<\/li>\n<li>4 eggs<\/li>\n<li>1\/4 c pistachio nuts, chopped (optional-never used)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 300\u00b0<\/li>\n<li>Roll zwieback fine. (food processor works great)<\/li>\n<li>Mix with 1 cup sugar, cinnamon, and melted butter.<\/li>\n<li>Set aside 3\/4 cup of this mixture to sprinkle over top.<\/li>\n<li>Butter a 9 inch spring-form pan well.<\/li>\n<li>Spread and press mixture on bottom and sides of spring-form pan. (or spread fresh unmelted butter on the bottom and sides of the form, and press cinnamon and zwieback mixed, into the butter.)<\/li>\n<li>Beat unseparated eggs with remaining cup of sugar until light.<\/li>\n<li>Add salt, lemon, and vanilla.<\/li>\n<li>Stir the cream in well.<\/li>\n<li>Then add cheese and flour.<\/li>\n<li>Mix all together.<\/li>\n<li>Strain through a sieve (I never do this).<\/li>\n<li>Stir until smooth.<\/li>\n<li>Pour into zwieback lined pan.<\/li>\n<li>Sprinkle remaining mixture over the top.<\/li>\n<li>Add nuts.<\/li>\n<li>Bake in 300\u00b0 oven 1 hour.<\/li>\n<li>Turn off heat and let stand in oven until cooled.
