{"id":2774,"date":"2016-02-20T14:20:20","date_gmt":"2016-02-20T21:20:20","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=2774"},"modified":"2016-02-24T04:07:38","modified_gmt":"2016-02-24T11:07:38","slug":"chicken-cacciatore","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chicken-cacciatore.html","title":{"rendered":"Chicken Cacciatore"},"content":{"rendered":"<p><em>If you make this with boneless breast and thighs you can cut the cooking time to about half an hour.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 chicken, cut in pieces (or 3 small boneless breast and 3 boneless thighs)<\/li>\n<li>3\/4 c flour<\/li>\n<li>1 tsp salt<\/li>\n<li>1\/4 tsp pepper<\/li>\n<li>6 Tab oil<\/li>\n<li>2 onion, sliced<\/li>\n<li>1 clove garlic, chopped<\/li>\n<li>1 can Italian tomatoes (about 2 pounds)<\/li>\n<li>1 Tab sugar<\/li>\n<li>1 tsp dried basil<\/li>\n<li>1\/2 tsp dried thyme<\/li>\n<li>1 green pepper, sliced in strips<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Wash chicken.<\/li>\n<li>Dry and shake with flour, salt, pepper to coat.<\/li>\n<li>Brown in oil.<\/li>\n<li>Remove from pan.<\/li>\n<li>Saute onions until soft.<\/li>\n<li>Saute garlic for a minute or two.<\/li>\n<li>Stir in tomatoes, sugar, basil, thyme.<\/li>\n<li>Heat to boiling.<\/li>\n<li>Return chicken to pan.<\/li>\n<li>Spoon sauce over pieces.<\/li>\n<li>Lay green pepper slices on top.<\/li>\n<li>Cover and simmer 1 1\/2 hr.
