{"id":2880,"date":"2016-02-02T08:46:28","date_gmt":"2016-02-02T15:46:28","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=2880"},"modified":"2017-01-19T14:00:45","modified_gmt":"2017-01-19T21:00:45","slug":"spanish-beef-stew","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/spanish-beef-stew.html","title":{"rendered":"Spanish Beef Stew"},"content":{"rendered":"<p><em>Really hearty &#8211; good for the cold winter nights. \u00a0Even better when done ahead and re heated.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 lbs pot roast, trimmed and chunked<\/li>\n<li>1\/2 c sherry<\/li>\n<li>1 c Manzanilla (dry white wine)<\/li>\n<li>2 tsp paprika<\/li>\n<li>1\/2 tsp ground cloves<\/li>\n<li>pinch of saffron<\/li>\n<li>1\/4 c sun-dried tomatoes<\/li>\n<li>3 onions chopped<\/li>\n<li>8 cloves garlic, chopped<\/li>\n<li>3 red bell peppers<\/li>\n<li>1 # mushrooms (Italian brown)<\/li>\n<li>1\/4 tsp nutmeg<\/li>\n<li>1\/4 c sherry<\/li>\n<li>1 c broth\/water<\/li>\n<li>salt and pepper<\/li>\n<li>olive oil<\/li>\n<\/ul>\n<p><strong>Directions: \u00a0<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0<\/li>\n<li>Combine onion, garlic, sherry wine, paprika, saffron. clove, salt and pepper in a zip-lock and marinate meat for 2 &#8211; 3 hours.<\/li>\n<li>Remove meat from marinade.<\/li>\n<li>Heat 1T olive oil in oven safe stew pot.<\/li>\n<li>Brown meat in olive oil.<\/li>\n<li>Remove meat &#8211; I put meat in storage container that I will use for leftovers.<\/li>\n<li>Add more oil if needed and saute onions.<\/li>\n<li>Add garlic and saute for 1 minute.<\/li>\n<li>Add meat, marinade, and tomatoes to pan.<\/li>\n<li>Cover and bake 350\u00b0 for 1 1\/2 hours.<\/li>\n<li>Heat 1T olive oil in large frying pan.<\/li>\n<li>Saute red peppers and remove to container.<\/li>\n<li>Add more oil if needed and saute mushrooms.<\/li>\n<li>Add nutmeg and remove to container with peppers.<\/li>\n<li>Deglaze pan with sherry.<\/li>\n<li>Add peppers, mushrooms, and broth to meat.<\/li>\n<li>Cover and return to oven and bake 1\/2 hour.<\/li>\n<\/ol>\n<p>If you want a thicker stew, place pot back on stove and add a roux of 2T flour and 2T butter blended together.
