{"id":302,"date":"2011-11-02T06:52:35","date_gmt":"2011-11-02T13:52:35","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=302"},"modified":"2019-02-03T14:32:31","modified_gmt":"2019-02-03T21:32:31","slug":"fondue","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/fondue.html","title":{"rendered":"Classic Cheese Fondue"},"content":{"rendered":"<p><em>So simple, so satisfying!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 garlic clove<\/li>\n<li>2 c white wine<\/li>\n<li>4 c cheese, grated (1 pound) Elemental or Gruyere<\/li>\n<li>3 T flour<\/li>\n<li>dash of nutmeg<\/li>\n<li>6 T Kirsch<\/li>\n<li>salt and pepper to taste<\/li>\n<li>1 loaf sour dough French bread cubed<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<p>1. Peel garlic and rub over the bottom of earthenware casserole or chafing dish (or fondue pot).<br \/>\n2. Pour in the white wine and heat very slowly.<br \/>\n3. Mix cheese with flour.<br \/>\n4. When air bubbles rise to the surface of the wine add a handful of cheese and stir constantly until cheese is melted.<br \/>\n5. Continue adding handfulls making sure each is completely melted before adding another.<br \/>\n6. Stir constantly.<br \/>\n7. When cheese mixture is smooth and starts to bubble add salt and pepper to taste and a dash of nutmeg.<br \/>\n8. Slowly pour in kirsch, stirring constantly until blended.<br \/>\n9. Cut bread into bite size pieces, each with an edge of crust.<strong><br \/>\n<\/strong>10. Place pot on the table and grab a long fork, skewer bread and dip.<\/p>\n<p><strong>Serves: <\/strong>2 big eaters<\/p>\n<p><strong>Notes: <\/strong><\/p>\n<p>\u2022 If fondue becomes too thick, thin with a little <span style=\"text-decoration: underline;\">warm<\/span> white wine.<br \/>\n\u2022 You also can use a fairly decent domestic Swiss cheese.<br \/>\n\u2022 I usually do the melting stuff on the stove rather than over sterno\/alcohol burner.\u00a0 Easier to control heat.
