{"id":3155,"date":"2016-06-02T13:43:09","date_gmt":"2016-06-02T19:43:09","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3155"},"modified":"2020-04-24T12:26:01","modified_gmt":"2020-04-24T18:26:01","slug":"fruitcake","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/fruitcake.html","title":{"rendered":"Fruitcake"},"content":{"rendered":"<p><em>The only fruitcake worth making &#8211; no citron! \u00a0A three generations favorite. \u00a0Make it before Thanksgiving so it can &#8220;age&#8221;.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 lb white raisins<\/li>\n<li>1 lb fruit cake mix<\/li>\n<li>1\/4 lb yellow pineapple<\/li>\n<li>1\/4 lb red pineapple<\/li>\n<li>1\/4 lb \u00a0green cherries<\/li>\n<li>1 \u00a0lb red cherries (reserve 20 for decoration)<\/li>\n<li>1\/2 c bourbon<\/li>\n<li>1 1\/2 lb butter, softened<\/li>\n<li>3 c sugar<\/li>\n<li>15 eggs<\/li>\n<li>2\u00a0lb pecans (reserve 60 whole halves\u00a0for decoration)<\/li>\n<li>1 1\/2 lb cake flour<\/li>\n<li>1 egg and a little milk for the glaze<\/li>\n<li>more bourbon for watering<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>The night before:<\/p>\n<ol>\n<li>Cut fruit into smaller pieces. (except cherries)<\/li>\n<li>Mix fruit with raisins. (except 20 cherries saved for decoration.<\/li>\n<li>Pour bourbon over the mixture and let stand covered overnight.<\/li>\n<\/ol>\n<p>Mixing:<\/p>\n<ol>\n<li>Preheat oven 300\u00b0.<\/li>\n<li>Cream butter well.<\/li>\n<li>Add sugar slowly.<\/li>\n<li>Add eggs one at a time, mixing between each egg.<\/li>\n<li>Transfer to very large bowl.<\/li>\n<li>Stir in fruit and pecans with a spoon. (except decorations)<\/li>\n<li>Sift in the flour while stirring with a spoon or hands.<\/li>\n<li>Carefully line bread pans with heavy duty foil. \u00a0Small pans ( ?x?) make 1 lb, medium (?x?)1 1\/2 lb.<\/li>\n<li>Scoop the batter into pans within 1\/2 in of the top.<\/li>\n<li>Decorate with reserved fruit and pecans.<\/li>\n<li>Brush with egg\/milk glaze.<\/li>\n<li>Place a large pan of hot water on the rack below the rack for the fruitcake. (You may have to refill it while baking)<\/li>\n<li>Bake for approximately 1 hr 20 min for small, 1 hr 50 min for medium pan. \u00a0They are done when a toothpick comes out clean. \u00a0Do not remove fruitcake from pans at this time.<\/li>\n<li>Brush with glaze twice during baking.<\/li>\n<li>Watering:\u00a0Sprinkle the cakes with a little bit of bourbon once or twice a week from Thanksgiving to Christmas. \u00a0Also keep the air saturated with bourbon.<br \/>\nMethod A: \u00a0Place pans in covered container with a shot glass of bourbon.<br \/>\nMethod B: \u00a0Place in a closed room with 3.6 liters of bourbon dumped on the floor. \u00a0Be careful not to drown the fruitcake.<\/li>\n<li>Now you can take the fruit cake out of the pans. \u00a0Leave the foil on and place in ziplocks.<\/li>\n<li>Enjoy, gift, freeze (it will keep for years in the freezer)<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>Makes 3 medium and 6 small pans, or 4 medium and 5 small pans.\u00a0 (\u00a0Large 8 1\/2 x 4 12 (6 cups), Med 7 1\/2 x 3 3\/4 (4 cups), small 6 x 2 1\/4 (3 cup))<\/p>\n<p><strong>Source: \u00a0<\/strong>Winifred Kleerup &#8211; contributed to the Kenilworth Union Church Cookbook,<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The only fruitcake worth making &#8211; no citron! \u00a0A three generations favorite. \u00a0Make it before Thanksgiving so it can &#8220;age&#8221;.
