This soup is the result. Roasting the tomatoes gives them a dense flavor that matches the peppers.<\/i><br \/>\n<b>Ingredients:<\/b><\/p>\n<ul>\n<li>3 pounds Tomatoes<\/li>\n<li>1 tablespoon Olive Oil<\/li>\n<li>12 ounces Roasted Red Peppers &#8212; canned<\/li>\n<li>1 Onion &#8212; diced<\/li>\n<li>4 cups Chicken Broth<\/li>\n<li>1\/4 cup Sun-Dried Tomatoes &#8212; diced<\/li>\n<li>3 Garlic Cloves<\/li>\n<li>1 teaspoon Thyme<\/li>\n<li>1 teaspoon Oregano<\/li>\n<li>1\/2 teaspoon Cumin<\/li>\n<li>1\/4 teaspoon Red Pepper Flakes<\/li>\n<li>Salt and Pepper<\/li>\n<\/ul>\n<p><b>Directions:<\/b><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0.<\/li>\n<li>Slice tomatoes in half.<\/li>\n<li>Place cut side down on baking sheet.Drizzle with Olive Oil, Salt and Pepper.<\/li>\n<li>Roast until skin becomes slightly charred, 30-60 minutes.<\/li>\n<li>Remove and let cool slightly.<\/li>\n<li>Remove tomato skins.<\/li>\n<li>In a stock pot, saut<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>I thought that a red soup would look festive for the harvest dinner.
