{"id":3249,"date":"2016-06-13T09:40:46","date_gmt":"2016-06-13T15:40:46","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3249"},"modified":"2016-06-13T09:40:46","modified_gmt":"2016-06-13T15:40:46","slug":"orange-cream-ladyfinger-cake","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/orange-cream-ladyfinger-cake.html","title":{"rendered":"Orange Cream Ladyfinger Cake"},"content":{"rendered":"<p><em>A bit of work, but you make it the day before so you can spend the time.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 Tab unflavored gelatin (2 envelopes)<\/li>\n<li>1 c sugar (divided)<\/li>\n<li>1\/8 tsp salt<\/li>\n<li>12 oz frozen orange juice concntrate<\/li>\n<li>6 eggs, separated<\/li>\n<li>2 Tab lemon juice<\/li>\n<li>1 tsp orange peel, grated<\/li>\n<li>1 tsp lemon peel, grated<\/li>\n<li>1 pt whipping cream<\/li>\n<li>16 ladyfingers<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Line the sides and bottom of a 9 inch springform pan with split lady fingers (cut side in).<\/li>\n<li>In the top of a double boiler, mix gelatin, 3\/4 c sugar and salt.<\/li>\n<li>Stir in OJ concentrate.<\/li>\n<li>Heat to scalding.<\/li>\n<li>Remove from heat.<\/li>\n<li>Beat egg yolks until light.<\/li>\n<li>Add some of the OJ mix to the egg yolks, beating constantly (to warm up the eggs &#8211; otherwise, if you put the cold eggs into hot stuff they with come out scrambled eggs &#8211; they cook instantly.)<\/li>\n<li>When you have added enough OJ to the eggs to warm them, \u00a0you\u00a0can add them into the OJ. \u00a0Just keep beating.<\/li>\n<li>Stir in lemon juice and peels.<\/li>\n<li>Cool until syrupy.<\/li>\n<li>Beat egg whites until stiff.<\/li>\n<li>Beat in the reaming 1\/4 cup sugar.<\/li>\n<li>Gently fold in the OJ mixture.<\/li>\n<li>Whip cream until stiff.<\/li>\n<li>Fold into the egg white\/OJ mixture.<\/li>\n<li>Turn into springform pan.<\/li>\n<li>Chill overnight.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong>12<\/p>\n<p><strong>Source: \u00a0<\/strong>Sunset Cookbook<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A bit of work, but you make it the day before so you can spend the time.
