{"id":3316,"date":"2016-08-14T15:48:24","date_gmt":"2016-08-14T21:48:24","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3316"},"modified":"2020-12-25T05:06:55","modified_gmt":"2020-12-25T12:06:55","slug":"meringue-cookies","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/meringue-cookies.html","title":{"rendered":"Meringue Cookies"},"content":{"rendered":"<p><em>This is for James. \u00a0Have fun!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 egg whites, room temperature (very important)<\/li>\n<li>pinch of salt<\/li>\n<li>1 tea vanilla extract<\/li>\n<li>1 Tab vinegar<\/li>\n<li>2\u00a0c granulated sugar<\/li>\n<li>1 c mini chocolate chips<\/li>\n<\/ul>\n<p><strong>Directions: \u00a0<\/strong><\/p>\n<ol>\n<li>Preheat oven 300\u00b0.<\/li>\n<li>Line cookie sheets with parchment paper. (or brown paper bags the way we used to.)<\/li>\n<li>Using stand mixer, beat egg whites, salt,\u00a0vinegar and vanilla on medium until soft peaks form.<\/li>\n<li>Slowly add sugar and beat until stiff peaks form, about 5 minutes.<\/li>\n<li>Remove from mixer.<\/li>\n<li>Gently fold in chocolate chips by hand until combined<\/li>\n<li>Drop batter by heaping tablespoons full onto cookie sheets.<\/li>\n<li>Bake for 25 &#8211; 30 minutes until cookies are cooked and slightly golden brown.<\/li>\n<li>Turn off the oven and let the cookies cool in the oven for an additional 20 &#8211; 30 minutes until cool.<\/li>\n<li>Remove and serve immediately or store in airtight container.<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>Makes about 3 dozen<\/p>\n<p><strong>Source:<\/strong>\u00a0\u00a0Lucia Henderson, Margie&#8217;s Godmother<\/p>\n<p><strong>More to know: \u00a0<\/strong><\/p>\n<ul>\n<li>You can make them with brown sugar, put in nuts, candied cherries, coconut, a drop of food coloring, mint flavoring &#8211; the possibilities are endless.<\/li>\n<li>You can heat the oven to 350\u00b0, put the cookies in the oven and turn it off. \u00a0Leave them overnight (or at least 2 hours). \u00a0They are called &#8220;Forgotten Cookies&#8221;<\/li>\n<li>These can be frozen.<\/li>\n<li>They are gluten-free.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This is for James. \u00a0Have fun!
