{"id":3347,"date":"2016-10-07T16:29:09","date_gmt":"2016-10-07T22:29:09","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3347"},"modified":"2022-09-03T12:49:13","modified_gmt":"2022-09-03T18:49:13","slug":"fruit-swirl-coffee-cake","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/fruit-swirl-coffee-cake.html","title":{"rendered":"Fruit Swirl Coffee Cake &#8211; Family Size and Large Quantity"},"content":{"rendered":"<p><em>A favorite at the Girl Scout Camp. \u00a0Really easy to vary the flavors. \u00a0Also makes a good dessert.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 1\/2 c sugar<\/li>\n<li>1\/2 c butter<\/li>\n<li>1\/2 c shortening<\/li>\n<li>1 1\/2 tsp baking powder<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1 tsp almond extract<\/li>\n<li>4 eggs<\/li>\n<li>3 c flour<\/li>\n<li>1 can (21 oz) apricot, blueberry, or cherry pie filling<\/li>\n<li>1 c powdered sugar<\/li>\n<li>1 &#8211; 2 Tab milk<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven 350\u00b0.<\/li>\n<li>Grease 15&#215;10 pan or 9&#215;13 pan or 2 9&#215;9 pans.<\/li>\n<li>Beat sugar, butter, shortening, baking powder, vanilla, almond extract and eggs in large mixer bowl on low-speed, scraping bowl constantly until blended.<\/li>\n<li>Beat on high-speed, scraping bowl occasionally, 3 minutes.<\/li>\n<li>Stir in flour.<\/li>\n<li>Spread 2\/3 of the batter into the pan. \u00a0It is very thick.<\/li>\n<li>Spread pie filling over batter.<\/li>\n<li>Drop remaining batter by tablespoonfuls onto the pie filling.<\/li>\n<li>Bake until light brown, about 45 minutes.<\/li>\n<li>Beat powdered sugar and enough milk to make a thin glaze.<\/li>\n<li>Drizzle with glaze while warm.<\/li>\n<\/ol>\n<p><strong>Serve: \u00a0<\/strong>18 to 30 pieces, depending on pan size.<\/p>\n<p><strong>Source: \u00a0<\/strong>Girl Scout Camp Scherman kitchen, Orange County Council<\/p>\n<p><strong>Note: \u00a0<\/strong>Freezes well.<\/p>\n<p><strong>Large quality:<\/strong><\/p>\n<p><strong>8x = 2 12&#215;26 pans \u00a0 \u00a0 \u00a0<\/strong><\/p>\n<ul>\n<li>3\/4 gal sugar<\/li>\n<li>2 lb butter<\/li>\n<li>2 lb shortening<\/li>\n<li>4 Tbs baking powder<\/li>\n<li>3 Tbs vanilla<\/li>\n<li>3 Tbs almond extract<\/li>\n<li>32 eggs<\/li>\n<li>1 gal flour<\/li>\n<li>2 #10 cans of pie filling<\/li>\n<li>1\/2 gal powdered sugar<\/li>\n<li>1 c milk<\/li>\n<\/ul>\n<p><strong>12x = 3 12&#215;26 pans<\/strong><\/p>\n<ul>\n<li>1 1\/2 gal sugar + 2 cups<\/li>\n<li>3 lb butter<\/li>\n<li>3 lb shortening<\/li>\n<li>6 Tbs baking powder<\/li>\n<li>5 Tbs vanilla<\/li>\n<li>5 Tbs almond extract<\/li>\n<li>48 eggs<\/li>\n<li>2 gal flour<\/li>\n<li>3 #10 cans of pie filling<\/li>\n<li>3\/4 gal powdered sugar<\/li>\n<li>1 c milk or more<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>A favorite at the Girl Scout Camp. \u00a0Really easy to vary the flavors. \u00a0Also makes a good dessert.
