No pineapple, no nuts. \u00a0ALWAYS cream cheese frosting!<\/em><\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>1 c vegetable oil<\/li>\n<li>2 c sugar<\/li>\n<li>1 tsp vanilla<\/li>\n<li>4 eggs [try an extra egg for high altitude]<\/li>\n<li>2 c regular flour<\/li>\n<li>1 tsp salt<\/li>\n<li>2 tsp baking soda<\/li>\n<li>2 tsp baking powder<\/li>\n<li>2 tsp cinnamon [see Notes]<\/li>\n<li>3 c grated carrots (about six largish carrots)<\/li>\n<li>[Cream Cheese Frosting &#8211; ingredients below]<\/li>\n<\/ul>\n<h3>Directions:<\/h3>\n<ol>\n<li>Preheat oven <strong>350\u00b0<\/strong>.<\/li>\n<li>Grease and flour a 9&#215;13 pan or two (2) 9 inch layer pans.<br \/>&nbsp;<\/li>\n<li>In a large bowl (or stand mixer) mix <strong>oil<\/strong>, <strong>sugar<\/strong> and <strong>vanilla<\/strong>.<\/li>\n<li>Beat in <strong>eggs<\/strong>, one at a time.<br \/>&nbsp;<\/li>\n<li><span style=\"text-decoration: underline;\">Separately<\/span> mix the dry ingredients: <strong>flour<\/strong>, <strong>baking soda<\/strong>, <strong>baking powder<\/strong>, <strong>salt<\/strong>, and <strong>cinnamon<\/strong>.<br \/>&nbsp;<\/li>\n<li>Add dry ingredients to the oil\/sugar bowl.<\/li>\n<li>Stir in <strong>carrots<\/strong>.<\/li>\n<li>Pour into prepared pan(s).<br \/>&nbsp;<\/li>\n<li>Bake for <strong>40 to 45 minutes<\/strong> or until a toothpick comes out clean.<br \/>&nbsp;<\/li>\n<li>Let cool in pan for 10 minutes.<\/li>\n<li>(For layer cake): Turn out onto wire rack and cool completely.<\/li>\n<li>Frost with Cream Cheese Frosting (below). \u00a09&#215;13 cake can be frosted in the pan.<\/li>\n<\/ol>\n<h3>Notes:<\/h3>\n<ul>\n<li>Some folks&#8217; carrot cake recipes include nutmeg, allspice, cloves, in addition or instead of <strong>cinnamon<\/strong>. Sounds like a basis for experimentation!<\/li>\n<li>Some folks&#8217; carrot cake recipes include pineapple and\/or raisins and\/or nuts. These are an abomination and should be shunned.
