{"id":3422,"date":"2017-01-23T15:49:57","date_gmt":"2017-01-23T22:49:57","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3422"},"modified":"2018-01-04T09:25:12","modified_gmt":"2018-01-04T16:25:12","slug":"cream-puffs-stuffed-with-crab","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/cream-puffs-stuffed-with-crab.html","title":{"rendered":"Cream Puffs"},"content":{"rendered":"<p><em>Do not be afraid &#8211; it is not that hard. \u00a0And so impressive! \u00a0Have the ingredients at room temperature. \u00a0We stuff 2 inch puffs with a mixture\u00a0of crab, hard boiled eggs, celery, and mayonnaise for a fancy hors d&#8217;oeuvre. \u00a0<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/2 c flour &#8211; sift before measuring<\/li>\n<li>1\/2 c milk<\/li>\n<li>1\/4 c butter (1 stick)<\/li>\n<li>1\/8 tsp salt<\/li>\n<li>2 eggs<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven 400\u00b0.<\/li>\n<li>Heat milk.<\/li>\n<li>Add butter.<\/li>\n<li>Bring to the boiling point.<\/li>\n<li>Add the flour and salt.<\/li>\n<li>Cook and stir (with a wooden spoon) until the batter leaves the sides of the pan and forms a ball.<\/li>\n<li>Remove from fire.<\/li>\n<li>Beat in eggs, one at a time, making sure to blend well before adding second egg.<\/li>\n<li>Chill the dough for at least half an hour.<\/li>\n<li>Place a spoonful of batter in 2 inch round on a greased tin, heaping them well in the center. \u00a0 Allow 2 inches between the puffs.<\/li>\n<li>Bake them at 400\u00b0 for 30 minutes.<\/li>\n<li>Reduce heat to 350\u00b0 for 5 minutes.<\/li>\n<li>Test the puffs by removing one from the oven. \u00a0If it does not fall i is done.<\/li>\n<li>When the puffs cool cut a gash in the side of each puff and fill them with sweeten whip cream, custard, or ice cream.<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong> Makes 6 large puffs or eclairs or 30 1 inch puffs.<\/p>\n<p><strong>Source: \u00a0<\/strong> Joy of cooking.<\/p>\n<p><strong>Notes: \u00a0<\/strong> When you double the recipe, use only one extra egg.
