{"id":3432,"date":"2017-01-27T17:03:54","date_gmt":"2017-01-28T00:03:54","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3432"},"modified":"2017-01-27T17:03:54","modified_gmt":"2017-01-28T00:03:54","slug":"donnas-potato-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/donnas-potato-salad.html","title":{"rendered":"Donna&#8217;s Potato Salad"},"content":{"rendered":"<p><em>Really good because the potatoes &#8220;marinate&#8221; in the dressing before mixing with the mayonnaise<\/em><em>. \u00a0Also keeps well.<\/em><\/p>\n<p><strong>Salad Ingredients:<\/strong><\/p>\n<ul>\n<li>3 1\/2 lb large red potatoes, unpealed, halved<\/li>\n<li>3\/4 c mayonnaise<\/li>\n<li>3\/4 c sour cream<\/li>\n<li>1\/4 c milk<\/li>\n<li>1 Tab Dijon mustard<\/li>\n<li>2 c chopped celery<\/li>\n<li>1\/2 c sweet pickle relish<\/li>\n<li>1\/2 c chopped green\/red onions<\/li>\n<li>1 lb bacon, cooked, crumbled<\/li>\n<li>1\/4 c fresh parsley<\/li>\n<\/ul>\n<p><strong>Dressing Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/4 c cider vinegar<\/li>\n<li>1\/c vegetable oil<\/li>\n<li>1 1\/2 tsp salt<\/li>\n<li>1 tsp pepper<\/li>\n<li>1 tsp celery seed<\/li>\n<li>1 c dry mustard<\/li>\n<\/ul>\n<p><strong>Dressing\u00a0Directions:<\/strong><\/p>\n<ol>\n<li>Combine ingredients in a large bowl.<\/li>\n<li>Whisk until well blended.<\/li>\n<\/ol>\n<p><strong>Salad Directions:<\/strong><\/p>\n<ol>\n<li>In a large saucepan, cover potatoes with water.<\/li>\n<li>Heat to boiling over medium-high heat.<\/li>\n<li>Cover and simmer 20 to 25 minutes or until tender.<\/li>\n<li>Drain.<\/li>\n<li>When potatoes are just cool enough to handle, remove skin with a paring knife. (Really???)<\/li>\n<li>While potatoes are still warm, cut into 1 inch chunks.<\/li>\n<li>Add to the bowl with he salad dressing.<\/li>\n<li>Toss gently to coat.<\/li>\n<li>Let stand stirring occasionally until the potatoes have absorbed most of the dressing.<\/li>\n<li>In another large \u00a0bowl, combine mayonnaise, sour cream, milk, mustard until blended.<\/li>\n<li>Add potatoes, celery, pickle relish, onion and 2 Tab parsley.<\/li>\n<li>Toss gently to mix.<\/li>\n<li>Cover with plastic wrap.<\/li>\n<li>Refrigerate 2 hours, up to 2 days.<\/li>\n<li>To serve, sprinkle with remaining parsley.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong> 16<\/p>\n<p><strong>Source: \u00a0<\/strong> Donna Barasch &#8211; some magazine.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Really good because the potatoes &#8220;marinate&#8221; in the dressing before mixing with the mayonnaise. \u00a0Also keeps well.
