{"id":3461,"date":"2017-02-08T15:23:30","date_gmt":"2017-02-08T22:23:30","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3461"},"modified":"2021-01-24T09:48:19","modified_gmt":"2021-01-24T16:48:19","slug":"swedish-pancakes","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/swedish-pancakes.html","title":{"rendered":"Swedish Pancakes"},"content":{"rendered":"<p><em>Handed down from Annie Kleerup, Margie&#8217;s great-grandmother, who made them over an open fire at family picnics.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 egg<\/li>\n<li>1\/2 c flour<\/li>\n<li>1 c milk<\/li>\n<li>3\/4 Tab salt<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/3 cube butter<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Ask Dad.<\/li>\n<\/ol>\n<p>And Dad says:<\/p>\n<ol>\n<li>Melt the butter in 12 inch frying pan.<\/li>\n<li>Let it cool.<\/li>\n<li>Mix egg and milk with electric beater. \u00a0Do not over beat.<\/li>\n<li>Put\u00a0flour, sugar, salt in sifter.<\/li>\n<li>Sift into egg\/milk mixture a little at a time while beating with mixer.<\/li>\n<li>Add melted butter.<\/li>\n<li>Squeegee the pan with a rubber scraper.<\/li>\n<li>Heat the pan.<\/li>\n<li>Ladle 1\/3 of the mixture into pan.<\/li>\n<li>Tilt the pan so the mixture goes all the way to the edge to form a full pancake.<\/li>\n<li>Cook until slightly brown.<\/li>\n<li>Run a metal spatula around the edge and \u00a0under the edge of the pancake.<\/li>\n<li>With the spatula all the \u00a0way under the pancake, flip it (without breaking it.)<\/li>\n<li>When \u00a0slightly browned, fold into quarters and serve.<\/li>\n<li>Serve with your choice: \u00a0Butter\/sugar, fresh strawberries, peanut butter, syrup, etc.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> \u00a0Makes 3 using a 12 inch pan.<\/p>\n<p><strong>Source:<\/strong> \u00a0Jim, Margie&#8217;s father<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Handed down from Annie Kleerup, Margie&#8217;s great-grandmother, who made them over an open fire at family picnics.
