{"id":3468,"date":"2018-11-16T14:12:16","date_gmt":"2018-11-16T21:12:16","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=3468"},"modified":"2019-01-14T16:26:56","modified_gmt":"2019-01-14T23:26:56","slug":"turkey-dressing-blue-book-2-turkeys","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/turkey-dressing-blue-book-2-turkeys.html","title":{"rendered":"Turkey Dressing &#8211;  2 Turkeys +"},"content":{"rendered":"<p><em>Thanksgiving is never a small at our house &#8211; 15 to 20 &#8220;chosen \u00a0family&#8221;. \u00a0And you have to have leftovers!<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 1\/2 lbs dry bread cubes (4# fresh bread = 3# dried)<\/li>\n<li>7 onions<\/li>\n<li>3 bunches celery<\/li>\n<li>3\/4 lb margarine<\/li>\n<li>6 eggs<\/li>\n<li>1 qt milk<\/li>\n<li>2 Tab garlic salt<\/li>\n<li>6 Tab mold (poultry seasoning)<\/li>\n<li>1 1\/2 Tab bugs (caraway seeds)<\/li>\n<li>salt and pepper to taste<\/li>\n<li>bacon grease<\/li>\n<li>4 c broth &#8211; approximately. \u00a0(The dryness of the bread will determine the amount of broth.)<\/li>\n<\/ul>\n<p><strong>Broth\u00a0<\/strong><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Remove the stuff inside the turkey &#8211; neck, heart, liver, etc.<\/li>\n<li>Remove the wings.<\/li>\n<li>Place 3 onions, celery tops, 1\/2 Tab garlic salt, gizzards, hearts, etc, necks, 2nd and 3rd wing joints in a large pot.<\/li>\n<li>Fill the pan \u00a0with water to cover.<\/li>\n<li>Simmer for several hours.<\/li>\n<li>Strain broth.<\/li>\n<li>Reserve liver, heart etc for giblet gravy if you must.<\/li>\n<\/ol>\n<p><strong>Dressing Directions:<\/strong><\/p>\n<ol>\n<li>Dice the celery and \u00a0onions.<\/li>\n<li>Saute until soft in margarine and bacon grease.<\/li>\n<li>Mix milk and beaten eggs.<\/li>\n<li>In a large, really large, bowl (or the kitchen sink) mix \u00a0dried bread, garlic salt, poultry seasoning, caraway seeds, salt and pepper.<\/li>\n<li>With a large spoon (or your hands) add the milk\/egg mixture.<\/li>\n<li>Add enough broth to make a moist mess. \u00a0Dressing should be slightly moist on the outside of cube but crispy on the inside.(Save remaining broth for gravy.)<\/li>\n<li>Rinse the inside of the turkeys thoroughly.<\/li>\n<li>Rub the inside and outside with butter\/bacon grease.<\/li>\n<li>Grease a 12 cup casserole with bacon grease.<\/li>\n<li>Stuff the birds with dressing, taking care not to over stuff.<\/li>\n<li>Place remaining dressing in casserole.<\/li>\n<li>Place wings on top of casserole.<\/li>\n<li>Grease roasting pans with bacon grease.<\/li>\n<li>Place turkeys in pans.<\/li>\n<li>Cover with old (clean) t-shirt soaked in bacon grease.<\/li>\n<li>Cook 3 1\/2 -4 hours.<\/li>\n<li>Let rest 30 &#8211; 60 minutes before carving.<\/li>\n<\/ol>\n<p><strong>Serves: \u00a0<\/strong>2 turkeys (22 lbs each) plus 12 cups. \u00a0Serves 40 people.<\/p>\n<p><strong>Source: \u00a0<\/strong>Many years of experience.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Thanksgiving is never a small at our house &#8211; 15 to 20 &#8220;chosen \u00a0family&#8221;. \u00a0And you have to have leftovers!
